Late-night kitchen testing turned into one of our favorite breakfasts yet.

These pancakes were made with freshly milled whole-grain flour, raw milk, sour cream, and simple ingredients. They were incredibly tender, full of rich flavor, and a great reminder of just how much freshly milled flour can bring to the table.

As I continue testing recipes, I've been thinking about expanding into more fresh-milled products and would love your feedback.

Would you be interested in freshly milled flour or baking mixes available by preorder?

Because freshly milled flour retains the bran, germ, and natural oils of the grain, it's best stored in the refrigerator or freezer soon after milling to help preserve its freshness. Offering it by preorder would allow me to mill it fresh for you.

This month I'm excited to continue sharing more of my fresh milled flour journey.

After a lot of testing, learning, and getting to know my new mill, I'm bringing back my Heritage Chocolate Chunk Cookies, made with freshly milled Rouge de Bordeaux heritage wheat, and introducing my NEW Heritage Spelt Fudge Brownies.

Fresh milling has completely changed the way I think about baking. Every recipe takes time to develop, and I'm committed to making sure each one meets the standards you've come to expect before it ever reaches the menu.

I'm also continuing to work toward a naturally leavened sourdough loaf made with 100% freshly milled heritage grains. It isn't ready yet—but when it is, y'all will be the first to know!

Along with these fresh milled favorites, you'll find my signature sourdough loaves, seasonal focaccia, cookies, and preorder-only sourdough pizza crusts.

I'm always looking for ways to make ordering from Drott's Handmade even better, and I have two ideas I'd love your opinion on.

First... I'm thinking about starting a private Bread Club where members would get:

• Sourdough tips and Q&A
• Polls to help choose future menu items
• Member-only extras from time to time

Second... I occasionally need to reach customers quickly if I have a question about an order. Right now, Simply Bread doesn't have a messaging feature, so I'm looking for the best way to handle that in the future.
