A fresh garlic clove actually contains very little allicin, the compound linked to many of garlic's health benefits.
The magic begins when you crush, chop, or mince garlic. Breaking its cells allows an enzyme called alliinase to transform a natural substance called alliin into allicin, the sulfur-rich compound responsible for garlic's strong aroma and many of its protective properties.
This process takes several minutes, which is why many nutrition experts suggest letting crushed garlic rest for about 10 minutes before cooking.
Scientists have studied allicin for its potential antibacterial, antiviral, and antifungal effects. Some research has also found that garlic supplements containing allicin may help support the immune system and may reduce the severity or duration of common colds.
One important thing to remember: high heat can quickly break down allicin. Because of this, raw or lightly cooked garlic generally retains more of this beneficial compound than garlic that has been cooked for a long time.
