Fat-Washing 101! ⚗️
Bartender Balm is made with the same coconut oil used to flavor Bimini Coconut Gin. But how does that work? 🤔
First, we fill one of our stills with a batch of 111 proof gin distillate. Then we add in 80lbs (!!) of organic, fair trade certified, extra virgin coconut oil. Using our still rather than a typical storage tank allows us to keep the temperature above 76*F, ensuring the oil remains in a liquid state throughout the infusion process. 💧
Once the infusion is complete, we allow the mixture to cool, which solidifies the oil. It initially forms a disc on top of the gin, which gets broken up to allow the mixture to cool completely. As this happens, the oil begins to form small “pearls” which slowly combine into larger pieces and eventually sink to the bottom of the still. 🫧
Once the oil has fully separated from the distillate, we pump out the infused gin, leaving the solidified oil behind. Then, we warm the still back up so the melted oil can be collected through the exit valve at the bottom of the tank and recycled into Bartender Balm! ♻️
