Healthy Chicken and Avocado Salad:
Ingredients:
1 cooked and shredded chicken breast
1 ripe avocado, diced
1/2 cup cherry tomatoes, halved
1/4 cup red onion, chopped
Juice of 1 lime
2 tablespoons olive oil
Salt and pepper to taste
Greens of your choice (such as lettuce, arugula, or spinach)
Instructions:
In a large bowl, combine the shredded chicken, avocado, cherry tomatoes, and red onion.
In a small bowl, whisk together the lime juice, olive oil, salt, and pepper to make the dressing.
