Simple and Healthy Quinoa Salad Recipe:
Ingredients
1 cup quinoa
2 cups water
1 can chickpeas, drained and rinsed
1 cucumber, diced
1 bell pepper, diced
1/4 cup red onion, finely chopped
1/4 cup fresh parsley, chopped
1/4 cup olive oil
1/4 cup lemon juice
Salt and pepper to taste
Instructions
Cook the Quinoa: Rinse the quinoa under cold water. In a medium saucepan, bring the water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15-20 minutes, or until all the water is absorbed. Remove from heat and let it cool.
Prepare the Vegetables: In a large bowl, combine the cooked quinoa, chickpeas, cucumber, bell pepper, red onion, and parsley.
Make the Dressing: In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
Combine and Toss: Pour the dressing over the quinoa and vegetable mixture. Toss gently to combine and coat everything evenly.
Serve: You can serve the salad immediately or refrigerate it for a few hours to let the flavors meld together.
