Mini Beef Wellingtons 🥩🥐

Ingredients:

- 1 lb (450g) beef tenderloin, cut into small cubes
- 1 tbsp olive oil
- 1/2 cup (75g) mushrooms, finely chopped
- 1/4 cup (60g) onion, finely chopped
- 1 clove garlic, minced
- 1/4 cup (60g) pâté or a plant-based spread
- 1 sheet puff pastry, thawed
- 1 egg, beaten (for egg wash)
- Salt and pepper, to taste

Instructions:

1. Sear beef cubes in olive oil until browned, then set aside.
2. Sauté mushrooms, onion, and garlic until soft.
3. Combine cooked mixture with beef, and mix in pâté or spread; season with salt and pepper.
4. Roll out puff pastry and cut into squares.
5. Place a spoonful of beef mixture in the center of each square.
6. Fold pastry over the filling and seal edges with a fork.
7. Brush tops with beaten egg wash.
8. Bake at 400°F (200°C) for 20-25 minutes or until golden brown.

Notes:

Feel free to add herbs like thyme or rosemary for extra flavor.
You can use different types of spread for variety!
