FINALLY a low- carb, high-protein biscuit that tastes GOOD!!! Comment ME if you are gonna try it. These feel like comfort food but actually support your goals (especially if you’re 40+ and being more intentional about how you fuel your body). Soft. Cheesy. Satisfying. And no blood sugar crash after 🙌 🧾 INGREDIENTS: • 2 cups almond flour • 3/4 cup cottage cheese (I use 2%) • 2 eggs • 1 1/2 tsp baking powder • 1 cup shredded mozzarella or cheddar cheese • 1/4 tsp salt 👩‍🍳 INSTRUCTIONS: Preheat oven to 350°F and line a baking sheet with parchment paper. In a large bowl, mix almond flour, cottage cheese, eggs, shredded cheese, baking powder, and salt until combined. (Dough should be thick like cookie dough, if too wet, add a little more almond flour.) Roll into balls. Place on parchment paper on a baking sheet. Lightly press down to shape. Bake for 25 minutes until golden and cooked through. Let cool for 5 minutes before removing.
