I was asked for some of my simple dinner ideas so here was my meal plan for this week. All of these meals took less than 30 minutes to make. You may notice some ingredients are used multiple times... thats because if you have it use it or its just really easy to do!

Monday: Cilantro Lime Salmon with cilantro aoili spicy chili garlic noodles and bacon and Cranberry Brussels sprouts

Tuesday: Hawaiian pineapple chicken with butter rice, 5 minute glazed carrots with canned biscuits

Wednesday: Quick and easy salami with small pasta (no picture ... i forgot to take one!) Whoops

Thursday: fast food because it was soccer , i had a coupon and I was baking a cake all day lol

Friday: Bourbon brown sugar steak tips, leftover biscuits and butter rice and cranberry bacon green beans (again, no picture.... what is it with me?!?

Saturday: Spicy Shrimp, broccoli garlic noodle stir fry

So... i didn't forget about this. I have just not been my sparkliest self lately. Between my body aches, fatigue and anxiety I just can't seem to muster up my full sparkle. On the bright side I am down 6 pounds which is great! Made my endocrinologist happy! Many more to go but it is a start! So today I am hoping to muster up enough to get back to work on my crafty business, decorate my house for Christmas, spending some QT with my kiddo and finish Christmas shopping! Wish me luck! Xoxo

So... I haven't officially gone over the results with my Neuro docs yet but... according to the MRI report in my portal Janet (aka my pituitary tumor) hasn't changed! This is AMAZING news! She will never go away completely due to her being tangled up on stuff so what we need is her to not grow because it could affect my vision again and/or require another surgery and we DO NOT WANT THAT! Thank you to everyone who sent me good vibes and prayers and tons if sparkle yesterday! I'll update you if my neuro doc has anything else to say!!! Yay!!! I'm celebrating this victory!

Tonight was not only another delicious healthy dinner of Shepherds Pie but also a mom win! This is made not only with ground turkey but the mashed potatoes are actually mashed cauliflower!!!!!! What?!?! And my kid actually ate it!!! Of course, I didn't tell him what they actually were, that is a secret I will be sure to keep but its so much easier maintaining healthy eating habits when you don't have to make separate meals !!! If you want the recipe and any of the other recipes I have made make sure you like my page and I will post it up for you all to try! It was so yummy! True comfort food without any of the guilt! This whole plate of food comes in at less than 300 calories which is a winner in my book :)

Two weeks and 6 lbs down!

Hey all my sparkly friends! A whole week has passed (and what a crazy week it was!) Quick update on the food front. One week and still going strong! 1200 Kcals a day! I mean I may have eaten a Ben and Jerrys pint slice yesterday but I also did 3 workouts and if you don't have a treat once in a while then you are set to fail. I have to keep reminding myself that this is not meant to be a diet. This is me stepping up and making an entire lifestyle change i was looking at these two pictures. One taken three years ago taken at my sisters baby shower and one taken the other day and its just awful the change. Its about a 70 pound difference! That's more than my 7 year old weighs! I know some if it is due to my pituitary tumor and my Cushings disease but I also responsible for the plethora of bad food choices I have made. I also have to think that if I eat healthy, exercise and make good choices and i start gaining weight then it could be a sign my cushings my have returned and I will be better able to gauge. Liking to cook definitely helps with my meal planning but I am always on the hunt for family friendly, inexpensive, weeknight meal ideas that are full of protein but lower calorie.

This weeks healthy dinners were :
Monday: Honey mustard Chicken and Roasted Brussel sprouts
Tuesday: Skinny Bang Band Shrimp
Thursday: Skillet Salmon with Cilantro lime Greek yogurt Sauce and cilantro lime brown rice
Friday: Mozzarella Stuffed Turkey Meatballs and Angel hair pasta
Saturday: Apple Chicken Sausage, sweet potato and apple bake

Sunday is family dinner at my in-laws which was
Spahetti and sauce , garlic bread and of course dessert! I still logged my calories but it wasn't a 1200 calorie day. All of my other meals did follow my usual breakdown of calories though.
