First night in Round Rock. Made it to The BE Hive in Austin for a Big Chick Sandwich (BE Hive Fried Chxn Patty, BE Sauce, Melted Cheddar, Pickles, Lettuce, and Onion on a Toasted Bun) and a rich, spicy slice of Carrot Pumpkin Cake. 💚 that all the containers and cutlery are compostable. Staff was super friendly too!

Colorado Day 10: City Park Farmers Market Round 2! We arrived much earlier this time (8:30a) and I tried:
* Moon Raccoon Baking Co.: their vegan peach bourbon and vegan yuzu lemon teacakes were scrumptious. I thought teacakes were hard like shortbread! How wrong I was! These were soft and moist in all the right ways.
* The Easy Vegan- The Summer Breakfast Sandwich and Grits were masterfully done! Sandwich starts with superbly grilled housemade English muffin and is filled with crunchy hash browns, fresh arugula, and ripe tomatoes with a tangy miso aioli. It comes with a side of creamy country grits topped with smoky chili oil, cherry tomatoes and crunchy popped sorghum. Each spoonful was divine.
* Francesca Trabucco Campos: my mom absolutely loved the Wild Berry NY style cheesecake. She was still talking about later in the day. I picked Smoked Mushroom, Potato, & Roasted Onion Focaccia. The mushrooms were so savory & full of umami and the bread was chewy with an airy inside. It was the perfect afternoon snack to eat on the shore of Boulder Creek later that afternoon.

Colorado Day 8: Part II: Thrilled I was able to get a reservation & experience mother other. I just had a starter and dessert this time. Opened with the Giarancini - adorable 2 bite spheres of delicately fried risotto with house giardiniera (my favorite- pls bottle & ship to Dallas!) paired with a thick celery root puree and creamy chive aioli. Each bite was the right blend of crunchy and tangy. For dessert I picked the Brioche Doughnuts. They were golden brown and came with plenty of vanilla custard & poached rhubarb sauces plus basil leaves to balance the sweetness. The team provided excellent service and I was thrilled to share some of my vegan pride stickers with Taylor. Excited to return & try more from the menu!

Colorado Day 8: Part I:
Scrumptious breakfast at City, O’ City. I had the Chicken & Waffles- a huge serving of chicken-fried cauliflower with bourbon maple syrup, chive creme fraiche, carrot bacon. The exterior was crispy and covered the juicy cauliflower and the carrot bacon was thin, crunchy & delicious. Honestly, I was a questioning the crème fraiche until I tried it and it ended up being really good- elevating the flavors of everything really well.

Also pictured the BBQ Mac Wrap with BBQ tofu, mac & cheese, creamy coleslaw, pickles, crispy onions, flour tortilla with side of spiced squash soup (which my mom really enjoyed) and a side of biscuits & yummy peppery gravy.

Colorado Day 5: Drove over to Edgewater Public Market to eat gladys and it was absolutely worth it. The Root Vegetable Reuben was packed with juicy, thinly sliced celery root pastrami, classic pickled kraut, & horseradish creme fraiche between buttery slices of lightly toasted marbled rye. I upgraded to dirty fries (crispy fried sprinkled with sour cream powder and drizzled with black garlic aioli & fresh chives). Drink was the randomly selected “Mucho Macho OF” (pasilla, sesame, tamarind, black garlic and Ritual Wh***ey Alternative). It was really good and has inspired me to try other zero proof drinks. 🍹 Dessert was a massive dark chocolate and sea salt cookie 🍪 which was just the right blend of chewy with crispy edges. Everything was fresh & full of flavor.

Colorado Day 4: Denver’s City Park Farmers Market City Park Farmers Market -

WongWayVeg was awesome. I had the Pesto Pasta Salad (carrot top pesto, w/noodles, carrot, cherry tomatoes, green peas, bell peppers & Parmesan was the BEST!

My dessert was Mango Sticky Rice Mochi from Taeko-san Takeout . It was as beautiful as it was delicious- buttery soft mochi & juicy mango with a sweetness that was perfectly balanced by toasted coconut & lime zest.

There so many vegan options that I couldn’t try everything; glad that I was able to share some Vegan Pride stickers! 🏳️‍🌈🌱

Colorado Day 2: breakfast - vegan sandwich with exactly the right amount of hot sauce with Aztec Mocha with oat milk Torpedo Coffee then Rocky Mountain Arsenal National Wildlife refuge Rocky Mountain Arsenal. lunch- vegan bao at Chopstickers in Denver. dinner - vegan tofu stew at Tibet’s Restaurant.
