When I first started making sourdough, I thought every little mistake was going to ruin my bread.
After years of baking and running a microbakery from my home, these are the 3 things I wish someone had told me from the beginning:
π₯ 1. An established starter is not as fragile as you think.
Seriously. I used to panic over every missed feeding. A healthy, mature starter is much more resilient than most beginners realize.
π₯ 2. No matter what, just bake it.
Too sticky? Bake it.
Overproofed? Bake it.
Underproofed? Bake it.
Some of my biggest lessons came from loaves I was convinced would be terrible. Every bake teaches you something.
π₯ 3. It doesn't have to be a perfect process to get amazing results.
Social media can make it seem like every loaf needs perfect scoring, perfect timing, and perfect crumb.
It doesn't.
Some of the best bread I've ever made came from days when I was tired, busy, distracted, and just doing my best.
Progress beats perfection every single time.
If you're new to sourdough, don't give up. Keep feeding, keep learning, and most importantlyβkeep baking. β€οΈ

π₯ Big News... I'm dusting off the flour and starting a new chapter.
A few years ago, I ran a successful sourdough microbakery out of my home. It was an incredible experience, and I met some amazing people along the way.
But somewhere between feeding starters, filling orders, and baking on deadlines, I started losing some of the joy that made me fall in love with bread in the first place.
So instead of reopening the bakery, I'm trying something different.
I'm going back to my roots and sharing the journey.
