Today was a reminder that growth isn’t always comfortable, and change doesn’t wait for the perfect moment. Sometimes, you just have to take a deep breath and trust yourself.
I don’t have all the answers, but I do know this. I refuse to stay stuck in places that no longer serve me. Every challenge I’ve faced has only made me stronger, and I know that whatever comes next, I’ll handle it like I always do.
If you’re in a season of uncertainty, just know that growth happens in the unknown. Keep going. Keep believing in yourself. You’re capable of more than you think.

Shrimp, crawfish or Chicken Egg Foo Young
Ingredients:
For the patties:
6 eggs
½ cup protein (cooked crawfish, shrimp, or diced chicken)
½ cup bean sprouts
½ cup chopped broccoli (finely chopped)
¼ cup peas
¼ cup chopped onions
1 tbsp soy sauce
½ tbsp cornstarch (helps bind and fluff the eggs)
1 tsp Old Bay seasoning
½ tsp Chinese five-spice powder
½ tsp black pepper
½ tsp garlic powder
Oil for frying
For the gravy:
1 cup chicken, turkey, or beef gravy
1 tbsp soy sauce
1 tbsp oyster sauce
½ tbsp cornstarch (mixed with 2 tbsp water for thickening)
½ tsp black pepper
Instructions:
1. Prepare the batter:
In a large bowl, beat the eggs.
Stir in your choice of protein (crawfish, shrimp, or chicken), bean sprouts, broccoli, peas, onions, soy sauce, cornstarch, Old Bay, five-spice, black pepper, and garlic powder. Mix well.
2. Cook the patties:
Heat oil in a skillet over medium heat.
Pour about ¼ cup of the egg mixture into the pan for each patty.
Cook for 2-3 minutes per side or until golden brown. Remove and set aside.
3. Make the gravy:
In a small pot, heat your chosen gravy (chicken, turkey, or beef).
Stir in soy sauce and oyster sauce.
Add the cornstarch slurry and cook until thickened.
4. Assemble & serve:
Pour the gravy over the egg foo young patties and enjoy!
