This Cottage Cheese & Spinach Crustless Quiche is light, protein-packed, and comforting, perfect for a simple breakfast, weekend brunch, or even a cozy dinner with a side salad.* What You'll Need 1 cup cottage cheese 1 cup shredded mozzarella cheese 4 large eggs 1/4 cup milk 2 cups fresh spinach, chopped 1/2 cup onion, finely chopped 1/4 teaspoon garlic powder Salt and pepper, to taste Olive oil spray, for greasing the dish How to Make It 1. Preheat oven to 375°F (190°C). Lightly grease a 9-inch pie dish or baking pan with olive oil spray. 2. In a medium bowl, whisk eggs, milk, garlic powder, salt, and pepper until combined. 3. Stir in cottage cheese and mozzarella until evenly mixed. 4. In a skillet, sauté onion in a drizzle of olive oil for 2–3 minutes until softened. Add spinach and cook 1–2 minutes until wilted. 5. Add the spinach-onion mixture to the egg mixture and stir gently to combine. 6. Pour into the prepared baking dish and smooth the top with a spatula. 7. Bake 35–40 minutes, or until golden and set in the center. 8. Let cool slightly before slicing. Serve warm or at room temperature.
