Home Cooking Sessions: Steak Frites. A French classic that’ll be sure to impress on Valentines Day. Full recipe below! 👇🏽🥩🍟

1. Season a thick steak with sea salt and black pepp - leave in fridge uncovered for at least 1h, ideally overnight. I used an insane Galician bone-in ribeye from @mr_txuleta - beautifully aged and marbled 
2. Clean up the bone marrow - submerge in cold salt water and leave in fridge overnight 
3. Using a mandolin or knife, thinly slice potatoes into strips and rinse till water runs clear - cover with fresh water and refrigerate for 1-2h
4. Remove steak 1-2h before cooking, then bring pan to high heat, lace with clarified butter 
5. Pat steak dry, place into the hot pan and press down firmly for 20 seconds - don’t touch for 2 mins!
6. Flip the steak, reduce pan to med heat and add shallots, garlic, rosemary, thyme + 4tbsp unsalted butter
7. Baste continually and flip every minute until internal hits 120f, then remove and pour over juices 
8. Add 1 diced shallot to the pan + 4tbsp green peppercorns (they usually come in brine and are soft, I didn’t have any handy so just used regular, don’t do this though 😆) - use crushed black pepp if not 
9. Cook for 2 mins, then deglaze with brandy (I often use whiskey here. Had some @suntorywhisky_hibiki handy) - cook off alcohol ~1 min
10. Add in 500ml beef stock and reduce by half, then add in 200ml double cream and simmer 
11. Season to taste, add a splash of Worcestershire and then scoop in your bone marrow - mix to combine
12. For the bone marrow, remove from salt water, pat dry, lace with olive oil, sea salt, pepper, then bake at 220c, for 15mins 
13. Drain potatoes, dry thoroughly, then fry in vegetable oil heated to 325f for 2-4 mins 
14. Plate up with a layer of sauce, your sliced steak, your fries, then your au poivre sauce and chopped chives

Timing is key here. Cook the steak and bone marrow together. After the steak, make the sauce. Do the fries whilst the steak rests. A delicious dinner #notoriousfoodie 🙅🏽‍♂️
