“I’m so glad to live in the world were there are October’s “ ~ L.M Montgomery (Anne of Green Gables) . The season of change is here. It’s time to say goodbye to long sunny days, put on your favorite comfy sweater, make your pumpkin latte, light a candle, turn on Hocus Pocus on your tv and start preparing this extremely simple but so delicious dessert which will make your house smell like Fall 🍂 To prepare this simple dessert turn your oven on and set on 375F next clean and cut your pears in half. With the tea spoon scoop out the core of the pear, when ready place it on the baking tray (you can cut the thin sliver of the other side of the pear so it’s stays upright). Next brush your pears with the mixture of maple syrup, cinnamon and vanilla extract. Add couple of hazelnuts in the middle, drizzle your favorite nut butter and sprinkle some coconut sugar. Place it in the oven for 20 to 25 minutes! You can eat it as it is or top your oatmeal with it. @ Hillsboro, Oregon

Super easy GF Crepes recipe from one of my favorite online girls . So simple: Blend Gf oats in your high speed blender( that will be your gf oat flour). Next measure - 2 cups of oat flour, 2 cups of plant based milk, 1 cup of water, 2 tbsp of maple syrup and 2 tsp of vanilla extract ( for salty version and 1/2 tsp of salt, half of the maple syrup and omit the vanilla extract ). So simple, healthy and delicious!

On our 8th year wedding anniversary we started reminiscing about all the vacations and trips we did together as a married couple and we couldn’t stop counting. So many states, countries and many, many local trips, camping with friends and much more add to that our day offs together and one day trips like this one yesterday to the together with our puppies 🥰 I love discovering the world with you and thank you for bringing me to this beautiful state @ Oregon

Just finished our mini staycation in Oregon and it was so much fun, my hubby completed his first official marathon , we hiked Smith rock state park, drove to Mt Hood, discovered amazing vegan food in Bend and much, much more. Oregon beauty never stops to amaze me. @ Oregon

Blueberry oats with fresh fruit are my latest obsession. I choose to eat oats more often because they are great source of fiber which supports our microbiome. Did you know that inside of us lives anywhere from hundred to thousand species of bacteria 🦠, yes we carry 39 trillion microorganisms in our colons and most of them are bacteria. Even invisible unicellular organisms need an energy source to feed them. That is why in the “Fiber Fueled” book Doctor Bulsiewicz (I’m polish so I can actually remember and pronounce his last name😆) explains that depending on how you are going to look at it we are 90% bacteria and 10% human! 👽 We are super-organism that serves as an ecosystem for four of the six kingdoms of life. We are just like the Amazon rain forest. Those microorganisms feed of the fiber which is found in plants! So wouldn’t you want to provide the right foods to feed the good bacteria which ultimately is You? Oats are great source of resistant starch (found also in rice, potatoes and legumes) which is technically not a fiber but behaves like it so if you want healthy microbiota whole grains ( like oats) and plant diversity are the foundation of building a healthy gut.

Yesterday I attempted making plant based roast! The result was amazing, I can’t believe it that you can make your own roast from scratch at home. Killing animals for food is unnecessary and so unhealthy. It’s time for our generations to build new traditions healthier for us and our planet! I used the recipe from YouTube channel.

What are you making for dinner tonight? That was always my favorite question to ask my friends before any class started during my university years. Then we would talk the whole class about how we are going to prepare it and where we are going to buy the ingredients. No, I wasn’t studying to become a Chef 👩‍🍳, I was studying Journalism...I guess I learned to ask lots of questions 🤣 do you remember? Today I have fun recipe for you guys!
