Made this delicious quinoa lentil salad with my fresh cucumbers from the garden. . Just add red onion, cherry tomatoes, parsley , lemon juice , S&P and oregano. Top with some balsamic glaze! Yum! ππ±

My new favorite meal prep, tofu eggs with quinoa and spinach. Cucumber , tomato, onion salad with just a drizzle of lemon juice and Aleppo pepper, avocado and half a small sweet potato! Protein packed and delicious! ππ±

Easy homemade tomato soup and grilled cheese. 4 14oz cans or 2 28oz cans of diced tomatoes, 1/2 tbsp dried oregano, 1/4 c fresh basil , 1 1/2 tsp sea salt, fresh ground pepper , 4 cloves of garlic, chopped and sautΓ©ed . Blend all in a blender or vitamix and heat. Add more spices to taste. Made the grilled cheese with sourdough bread , Miyokoβs vegan butter and follow your heart sliced pepper jack cheese. ππ±

My version of pasta puttanesca! Lots of garlic, fresh tomatoes and basil from the garden, pinch of salt. I touch of olive oil . And I did use a few anchovies. Ikik. Not 100% plant based but I fudged a little. I am plant based most of the time. Since I started menopause I added a bit of fish to my diet for health. But Iβm still 99% plant based. ππ±
