Roasted Strawberry Dutch Baby Pancake 🥞🍓 Might be a controversial opinion, but I think dutch baby >>>> regular pancakes. They’re so easy to make and you tbh is there a cooler looking breakfast?! 

Dutch baby pancake batter comes together in a blender for a super smooth batter, so you don’t even need to get out a mixing bowl. It’s essential to preheat the pan in the oven before adding in the butter so you get that perfect rise and delicious crisp edges.

Want to give it a try this weekend? Here’s how we made it!

Roasted Strawberry Dutch Baby (serves 2-4)

Pancake batter:

1/2 cup all purpose flour
1/2 cup milk (can use nondairy)
2 eggs
2 tbsp granulated sugar
1/2 tsp vanilla extract
1 tsp lemon zest
1/4 tsp salt
2 tbsp butter (can use nondairy)

Roasted strawberries (these are sooo good, don’t skip them!)

1 pint strawberries, quartered (~2 cups)
1 tsp lemon zest
2 tbsp sugar

Preheat oven to 425F.

Place a 9” oven-safe skillet in the oven while it preheats. (We use cast iron.)

Meanwhile, add all pancake ingredients except butter to a blender and blend until smooth. Let sit for 10-20 minutes while the oven heats.

Toss together the strawberries, lemon zest and sugar, then transfer to a sheet pan.

Once oven is heated, add butter to the pan and swirl until it’s all melted, then pour in the pancake batter right away. Place the pancake and the strawberries in the oven. Bake for 15-20 minutes, until the edges are puffy and golden brown and the strawberries are jammy.

Top with strawberries and serve warm with maple syrup and/or powdered sugar. Enjoy! #strawberry #dutchbaby #pancake #easyrecipes #brunch 09/25/2023

Oh gosh.. if I were not on a low carb diet.....

RASPBERRY CREAM CHEESE COFFEECAKE

Ingredients:
👩‍🍳For the filling:
1/4 c sugar
8 oz. cream cheese-softened
1 egg white
1 c raspberries-washed and well drained
👩‍🍳For the cake:
1 1/2 c flour
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
5.5 tbsp butter- softened
1/2 c sugar
1 egg + 1 egg yolk
3/4 c sour cream
1 tsp vanilla
👩‍🍳For the streusel topping:
1/3 c sugar
1/2 c flour
3 tbsp butter-chilled and cubed

Directions:
Preheat oven to 350 F
Grease 9 inch springform pan and line the bottom with parchment paper. Set aside.
👩‍🍳To make the filling: Mix together the cream cheese and sugar on medium-low speed until creamy. Add egg white and mix on low just to combine. Set aside.
👩‍🍳To make the cake batter: In a bowl stir together flour, baking powder, baking soda and salt, set aside.
With an electric mixer cream together the butter and sugar on medium-low speed. Add egg and egg yolk and vanilla. Slowly mix in the flour mixture alternating with the sour cream. Transfer the batter into the prepared pan and smooth with a spatula. Spread the cream cheese filling on top. Place raspberries onto cream cheese filling.
👩‍🍳To make the topping: Combine sugar, flour and chilled cubed butter in a bowl. Stir with a fork or pastry blender until the mixture is crumbly.( Make sure the streusel is in pea-sized crumbs)
Sprinkle the streusel on top of raspberries.
Bake for 40-45 minutes until a cake tester inserted in the center comes out clean. Cool on a rack, run a thin knife around the cake and loose ring of springform pan.
Store in the fridge.
