🌶 🥪 TUNA TAHINI PRESSED PEPPER
Tahini Harissa Sauce
1/3 Cup + 1 Tbsp tahini
1/3 Cup extra-virgin olive oil
1/4 cup fresh lemon juice
1/4 cup cold water
2.5 Tbsps. harissa
1/2 tsp. finely grated lemon zest,
6 cloves roasted garlic
Salt and pepper to taste
Start with the tahini and cold water, whisk until it’s smooth and creamy. The tahini + cold water will seize up briefly before getting creamy and smooth. Add remaining ingredients to a food processor and blend, store for up to a week.
Make a Tuna Tahini Pressed Pepper:
½ tsp avocado oil to season the grill pan
1 red, orange, or yellow bell pepper, halved, seeded
1 can of tuna
+ any tuna additions, use what YOU love (I love pickles*, celery, and parsley) *make sure they are compatible
+ a healthy serving of tahini sauce – you know how you like it.
MIX up the tuna salad to your preferences - you know just how you like it
FILL the pepper, and sandwich together
PREHEAT a grill pan OR a cast iron over medium heat.
OIL the grill pan
PLACE on oiled pan, pressing down on the top with another heavy pan to smush and flatten a bit
COOK for 2-3 minutes until grill marks sear in and pepper has softened
FLIP (carefully)

Do you like spicy? This spicy piri piri chicken is one of my favorite recipes.

🔹Ingredients
2 pounds 2.25 lbs chicken quarters
1 small onion, sliced
1 lemon, sliced
Handful fresh cilantro (for garnish)
1 tablespoon oil (for Instant Pot)
Piri Piri Sauce:
1/4 cup lemon juice
2 garlic cloves, minced
2 tbsp white vinegar
1 tbsp oil of your choice (I used )
2 tsp chili powder
2 tsp paprika
1 tsp cayenne
1 tsp oregano
1 tsp ground ginger
1/2 tsp salt
1/4 tsp pepper
1/2 cup of low-sodium chicken broth (Instant Pot only)
🔹Instructions
🔻Slow Cooker: Place sliced onion in the bottom of the slow cooker. Add chicken on top. In a small bowl, mix together piri piri sauce ingredients. Pour sauce over chicken. Top with lemon slices. Cook HIGH 2-3 hours or LOW 4-6. Top with fresh cilantro.
🔻Instant Pot: Turn the pressure cooker to sauté. Once hot, add the oil and chicken skin-side down and sear, few minutes until browned. You might need to do this in batches depending on the cut of chicken you use. If you are using skinless chicken skip this step and add the chicken directly to the pressure cooker. Remove chicken from the pressure cooker and set aside. Add onion to the pot. You may need to add more oil. Cook 3-5 minutes or until onions are soft. Add chicken back to the Instant Pot on top of the onions. In a small bowl, mix together the piri piri sauce ingredients. Pour the sauce on top of the chicken. Top with lemon slices. Close lid and seal valve. Set high pressure for 10-20 minutes (depending on your cut, I needed 20 for quarters). When done, quick release the pressure. Make sure internal temperature for the chicken is 165° Fahrenheit. Carefully remove the chicken.
🔻I broiled my chicken afterwards to crisp the skin.

Wild blueberry loaf cake 🍰
📝 Ingredients
1 cup of wild blueberries, dusted with flour and set aside.
1 cup and 1/4 of flour
1 tsp of cinnamon.
1 tsp of vanilla powder.
2 tablespoons of lemon juice.
1/2 cup of plant based milk with 2 tsp of apple cider vinegar. Leave aside.
2 very ripe bananas. You need them to be very soft.
1 cup of coconut sugar.
1/2 cup of coconut oil, melted.
1 tsp of baking soda.
2 tsp of baking powder
👩🍳 Instructions
1. Preheat the oven to 350F.
2. Grease a loaf pan.
3. Mix dry ingredients together really well.
4. Mix wet ingredients together.
5. Add wet to dry and mix well.
6. Fold in your blueberries.
7. Bake for 1 hour or until centre is cooked
😍 Blueberry frosting:
Boil one cup of wild blueberries until soft. Strain it through a mesh to get 1/2 cup of liquid.
Take one or two cans of coconut milk chilled from the fridge. Scoop out the cream part from the cans. Blend with 1/2 cup of icing sugar and pour the blueberry liquid. Whip for 4 minutes until fluffy. Add onto your cake
Just to ensure the top cooks evenly and doesn’t brown, I placed a very loose aluminum foil tent over the loaf pan while baking. I removed it the last ten minutes.

Creamy Garlic Shrimp
*Sprinkle salt and pepper to shrimp and pan fry with some olive oil. Brown on both sides then remove and set aside.
* Add butter to same pan with some beef broth. One that comes to a simmer add some minced garlic.
* Add heavy cream and Parmesan cheese. I wait until the very end to add seasonings so they don’t burn off. I added some cayenne season mix I found at Sam’s Club that I’m obsessing over. I also added season salt. Taste test and adjust each to your liking. (Hint: the more Parmesan cheese the thicker the sauce).
* Bring back shrimp to sauce pan and let cook together for about another 5 mins on medium heat.
* Serve over a bed of zucchini pastas, vegetable medley, or cauliflower risotto or mash..........

BITE PIZZA POPPERS
5 mini peppers, sliced in half (I buy these at Trader Joe’s)
1/2 cup tomato basil sauce
1/2 cup mozzarella, shredded
6 slices applegate turkey pepperoni, cut into small circles with a 1/2-inch cookie cutter (or into triangles with a knife)
1. Preheat oven to 400 F.
2. Spoon 1 tablespoon tomato basil sauce into each pepper half and top with 2 tablespoons cheese and 2 mini pepperoni. Bake for ~10 minutes, until hit and bubbly.
