Have you ever done one of these? I’ve seen some really cool ones at the craft store! Half way through this I thought I could do another one maybe, but now that it’s done I think I’m good. 🤣🙏🏼😝 I tend to turn anything into “work”, something to be conquered, but if you take your sweet time it can actually be quite therapeutic. 🤷‍♀️🩷

I make the BEST banana-blueberry-cinnamon pancakes, just FYI. 😉

I do Make Ahead Breakfast around here, cuz who can keep up, ya know? And it just so happens that feeding oneself is one of the most important SELF LOVE skills to master! 🩷

Why do I make dozens of pancakes at once?
* You can make pancakes any way you like, store them in the fridge for the week and reheat, or store some in the freezer, folded up between freezer paper, and then thaw them out for later use! Add bacon, sausage or meat alternative on the side and Voila! Home Cooked Breakfast every morning, in minutes. 🙏🏼

*these do get pretty mushy after freezing, due to my high blueberry content! They just need more time in the toaster oven when that happens. I don’t even put syrup on most of the time. Just a little butter on top…yum!

First I mash up bananas, eggs and milk.
Then I add Kodiak power cakes mix along with ground flax or chia seed and whatever other nutritional blend I happen to have. (It’s super important to add protein & fiber when using fruit bases due to the sugar content.) I don’t measure anything, just mix to desired consistency. This changes depending on the ripeness of the bananas used at the time. I’ve used greenish, yellow or brown and they all taste about the same to me. Don’t forget the cinnamon and vanilla! Enjoy! 👩‍🍳
