VODKA CHICKEN STUFFED BELL PEPPERS ✨
What you’ll need:
1 bell pepper, cut in half/ seeded
3/4 cup chopped/ cooked chicken*
1/2 cup shredded mozzarella*
1 tsp Parmesan
Spices- heavy pinch of garlic powder, paprika, oregano Black pepper + salt
2-3 tbsp Vodka sauce
Topping:
1.5 Tbsp bread crumbs mixed w/
1.5 Tbsp Parmesan and seasonings
-Preheat oven to 425. Cut bell peppers in half and take seeds out. Place the halves of bell peppers on a parchment paper lined pan, facing down. Bake for 10 minutes.
-In a bowl mix together the filling ingredients.
-Place mixture inside the bell peppers. Add extra cheese on top and the breadcrumb mixture.
-Bake for 15-20 minutes or until cheese has melted. Serve as is or with fresh basil on top.
*Makes 2 halves. Double up as needed.
*Filling quantity might vary depending on the size of your bell pepper so please keep that in mind, you might need more or less, etc.

Summer is definitely not over 😬 This dinner is so fresh and delicious! If you love shrimp salad like I do… you gotta give my viral Caesar shrimp salad a try! I’ve shared before different ways I serve this (lettuce wraps and on a brioche bun) but especially love it on a tostada.
Shrimp is one of my favorite proteins cause it’s so easy to prepare and I always have some in the freezer! Enjoy y’all ✨
✨Caesar Shrimp Salad ✨
* 8 shrimp, boiled
* 1 celery rib/stalk
* 2-3 tsp scallions, chopped
* 1-2 tbsp Caesar dressing
* 2 tsp Parmesan
* 1 tsp parsley, chopped
* Splash of lemon juice
* Heavy pinch of Garlic powder
* Salt and pepper to taste
* Chili flakes *optional
-Boil shrimp for about 3 minutes. Or until cooked through. Don’t overcook!*
-Roughly chop your shrimp.
-Add everything to a bowl and mix.
*Adjust caesar dressing amount depending on preference of how ‘sauce-y’ you prefer your shrimp salad.
-Place on tostadas with romaine lettuce, and extra parmesan.
-Enjoy
