Ingredients
2 slices artisan or whole-grain bread, lightly toasted
1 large ripe tomato, sliced
2 tbsp cream cheese or Greek yogurt
½ tsp garlic powder (or 1 small clove grated)
1 tsp fresh herbs (basil, parsley, or dill), finely chopped
Salt, to taste
Fresh cracked black pepper
Optional: a few arugula leaves or baby spinach
Optional drizzle: balsamic glaze or olive oil
Instructions
In a small bowl, mix the cream cheese (or Greek yogurt) with garlic and herbs until smooth.
Spread the mixture evenly over both slices of bread.
Layer the tomato slices on one slice and season lightly with salt and black pepper.
Add greens if using, and finish with a light drizzle of olive oil or balsamic glaze.
