Bacon Cheeseburger Meatloaf
Ingredients:
1 1/2 lbs ground beef
8 slices of bacon, cooked and crumbled
1 cup sharp cheddar cheese, shredded
1/2 cup bread crumbs
1/4 cup ketchup
1/4 cup mustard
2 tablespoons Worcestershire sauce
1 onion, finely chopped
2 cloves garlic, minced
2 eggs, beaten
Salt and pepper to taste
For the topping:
1/2 cup ketchup
1 tablespoon mustard
2 tablespoons brown sugar
Directions:
Preheat your oven to 350°F (175°C). Lightly grease a loaf pan.
Combine the meatloaf mixture: In a large bowl, mix together the ground beef, crumbled bacon, cheddar cheese, bread crumbs, ketchup, mustard, Worcestershire sauce, onion, garlic, eggs, salt, and pepper until well combined.
Form the meatloaf: Transfer the mixture to the prepared loaf pan, shaping it to fit.
Prepare the topping: In a small bowl, mix together the ketchup, mustard, and brown sugar. Spread this mixture over the top of the meatloaf.
Bake: Place the meatloaf in the oven and bake for 1 hour, or until the meatloaf is cooked through and the topping is caramelized.
Serve: Let the meatloaf rest for 10 minutes before slicing. Serve warm for a hearty and satisfying meal.

Maple Dijon Pork Tenderloin with Apple Cider Sauce
Ingredients:
1 pork tenderloin
Salt and pepper to taste
2 tablespoons olive oil
1/4 cup maple syrup
2 tablespoons Dijon mustard
1/2 cup apple cider
1/2 cup chicken broth
1 tablespoon cornstarch
1 tablespoon water
Fresh thyme for garnish
Directions:
Preheat oven to 400°F (200°C).
Season pork tenderloin with salt and pepper.
Heat olive oil in an oven-safe skillet over medium-high heat.
Sear the pork tenderloin on all sides until browned, about 2-3 minutes per side.
Transfer the skillet to the oven and roast for 15-20 minutes, or until the pork reaches an internal temperature of 145°F (63°C).
In a small bowl, whisk together maple syrup, Dijon mustard, apple cider, and chicken broth.
Pour the maple syrup mixture over the pork tenderloin in the skillet.
Return the skillet to the oven and roast for an additional 5 minutes, or until the sauce is slightly thickened and the pork is cooked through.
Remove the skillet from the oven and transfer the pork to a cutting board. Let it rest for 5 minutes before slicing.
In a small bowl, mix cornstarch and water to make a slurry. Add the slurry to the sauce in the skillet and cook over medium heat until thickened, about 2-3 minutes.
Slice the pork tenderloin and serve with the apple cider sauce. Garnish with fresh thyme.
