Check out this DELICIOUS (and super easy to make!) pumpkin soup π I've been eating this so much recently - anyone else absolutely obsessed with fall spices? This soup has all the goodies - cinnamon, nutmeg, cloves, and even a little cayenne pepper for my heat lovers π₯I made a huge batch this week for my work Thanksgiving lunch (it was a hit!), and was definitely not mad about having leftovers π Original recipe by
Here's the recipe:
π PUMPKIN SOUP π
*Makes about 5 servings*
Ingredients:
- 3 tbsp olive oil
- 4lbs pumpkin (yep, whole pumpkins!)
- 1 yellow onion
- 6 cloves garlic (or 3 tbsp minced garlic)
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/8 tsp cloves
- 1/8 tsp cayenne pepper
- 1/2 tsp black pepper
- 4 cups low sodium veggie broth
- 1/2 cup light coconut milk
- 2 tbsp maple syrup
Directions:
- Cut the pumpkins in half and scoop out the seeds and pulp
- Bake facedown on lined or oiled baking sheet at 425F for 35 min or until soft
- When finished, set aside to cool
- Heat olive oil on medium heat and once hot, add chopped onion, salt and garlic. Cook until onion is translucent
- When the pumpkin is cool enough to touch, peel the outside off the pumpkin and add it in small chunks to the onion mixture
- Add the cinnamon, nutmeg, cloves, cayenne pepper, black pepper, and vegetable broth
- Bring to a boil and let simmer for 15 min
- When finished, let cool a bit and add coconut milk and maple syrup and stir to combine
- Working in small batches, scoop the soup into a blender and blend until creamy (or use an immersion blender if you have one!)
- Optional: top with pepitas for a little crunch!
Save this for your next meal prep, and let me know if you try it! π
Hi friends, I'm back and I've missed you π
The last month or so I took a small step back from social media (I could only handle like 10min per day for my mental health, I'm sure a lot of you understand π
). Then I caught the most stubborn cold I've ever had... Going on like a month now πππ (Not Co-vid π) So I also stayed away from the gym and prioritized sleep. And although I feel very out of whack from not working out for so long I'M FINALLY FEELING BETTER and got back to the gym this week ππ
Today I want to remind you that everyone is starting from somewhere and everyone has "off" days (or weeks ππΌββοΈ). A few months ago I got to the point where I could do about 15 pushups at once, and today these 8 felt HARD. *Watch as I slow down and the struggle beings through the video π
* And instead of being bummed about that, I said "Hey Christie, you can still do pushups! And that's awesome!"
Your body can do amazing things So love yourself, wherever you're at today. And get to work. πͺ

A day late, but still getting it done! is ready for the week! I tried out a bunch of recipes from my Power Plates recipe book (by π) and tweaked them a little bit for my own preferences. I am very excited to try them! Does anyone else not taste their food while they cook? I know I'm supposed to as a good chef, but I like the surprise or something π€·πΌββοΈHere's what's on the menu:
- Pre-workout: 2 protein waffles with a little maple syrup
- Post-workout: Protein smoothie with almond milk, greens and frozen berries
- Meal 1: Veggie hash with tempeh - Brussels sprouts, carrots, parsnips and yellow potato topped with arugula
- Meal 2: Chickpea pasta salad with white beans, broccoli, zucchini and pesto
- Meal 3: Seitan tacos with chickpea flour tortillas, homemade refried beans, romaine, salsa, and avocado
- Meal 4: Mulligatawny - a lentil soup with rice and veggies π I added veggie chicken for extra protein
Which recipe do you want me to share this week? And what are you making for lunch for your meal prep?

10/27/2020
Something exciting happened last week that I somehow forgot to share.
π
On January 1st 2020 I pinned a little note on my corkboard that said I wanted to run 250 miles outside this year.
ποΈ
For reference on how ambitious this was for me, since I started using Strava to track my runs in 2015, I had logged about 160 miles outside TOTAL.
π
I signed up for a half marathon for August, started slow, told myself I would start increasing the distances on my long run each week to bag some miles, and got to work.
ππΌββοΈ
Then of course covid came, and I wasn't even sure I was going to be able to run outside. But luckily I have lots of beautiful, not-so-crowded places to run locally.
π
Then my half-marathon was cancelled (TWICE) and I almost stopped doing my long runs, because what the heck was I training for now?
π
But then I remembered my new years goal. I wasn't doing this just so I could survive the race, it was to accomplish something that seemed a little out of reach a few months ago.
π
And I'm happy to say I DID IT. I may even hit 300 miles before the winter retires my wimpy self to the treadmill for the winter.
πΆπΌπ
So today I want you to search through that notebook or post it note you wrote on at the beginning of this year and find those goals you set for yourself before s**t hit the fan in 2020. What have you accomplished? What do you still want to work on? What's something you can really put in some work towards before the year is over? What small step can you take today to get closer to that goal?
π€
Because I'm here to tell you YOU CAN DO IT. Whatever it is, you can! And if you need a little help, let's do it together.
π
I have ONE SPOT left open for online personal training. If you're ready to commit to putting in some work and accomplishing something awesome, DM me and let's get started!!
πͺπ
Now excuse me while I go treat myself to some new running sneakers for next year's goal. π

Forgot to post this yesterday so happy belated ! There's a couple repeats from last week because I had some leftover ingredients (and they were delicious!) But figured I'd share anyway! I've been focusing a lot on eating a large volume of veggies to make me feel full (rather than calorie dense, low volume foods) and JEEZ it was hard to finish all this food yesterday π but I've had so much energy in my workouts, and it feels great to never feel hungry eating this healthy!
If you want to learn how to build meal plans like this for yourself, DM me and let's chat π

10/01/2020
There are 90 days left in 2020.
(Okay, 91 but close enough right?)
90 day goals are one of my FAVORITES to set because you can accomplish so much! Really! I know it doesn't sound like a long time, but you would be amazed with how much you can get done in 90 days even if you just do a one little thing each day.
So tell me, what are you going to do with the rest of 2020? We all know this year's been a s**t show, but that doesn't mean you have to just call it a loss.
Make this next 90 days count.
What new habits are you going to instill into your routine for these 3 months? Will you go to bed at a specific time every night? Drink an extra 8oz of water a day? Move your body and fuel it right each day?
Let's aim higher. How many pounds will you lose? How much weight will you stack on those barbells? How far will you run and how fast? How fricken strong and badass will you feel 90 days from now?!
If you're serious about those goals, you need a specific plan. And you know what really helps? A coach.
Give me 90 days and I'll give you the results you want. If you're willing to put in the work, I promise to give you accountability, share my knowledge with you, and help you accomplish whatever goal you set.
Let's show 2020 it can't stop us ππ
