🔴 HIGH PRIORITY VIOLATIONS

• Ready-to-eat milk in the walk-in cooler was kept beyond the allowed 7-day period. Stop Sale issued.

• Stop Sale issued for vacuum-packaged raw tuna at 37°F and mahi at 34°F that had been thawed without being removed from their reduced-oxygen packaging.

🟠 INTERMEDIATE VIOLATIONS

• A bartender with long polished/artificial nails handled exposed food without gloves while portioning salsa and scooping chips.

• Hot water at the handwashing sink near the kitchen entrance measured 77°F, below the required minimum of 85°F.

🟢 BASIC VIOLATIONS

• Black/green/pink mold-like buildup was observed on metal plates inside the ice machine. Management immediately removed the plates for washing. Corrected on-site. Repeat violation.

• Vacuum-packaged raw tuna at 37°F and mahi at 34°F had been thawed without being removed from packaging labeled to remain frozen until use. See Stop Sale.

• A cutting board at the make table had cut marks and was no longer considered cleanable. Repeat violation.

• Ice buildup was observed in the walk-in freezer. Repeat violation.
