Warm Roasted Kale & Tomato Salad šŸ„¬šŸ…

And then there’s the garlic. šŸ§„ Not only does it bring its own antioxidant benefits, but roasting it brings out this incredible depth of flavor, so you don’t have to rely on a lot of salt.

And the textures? On point. šŸ¤ŒšŸ¼

Partially crispy kale, soft and juicy roasted tomatoes, and perfectly roasted garlic that brings the aroma and flavors all together.

Then the feta comes in as the cherry on top… over-the-top delicious. šŸ¤

Quick, easy and full of flavor.

Try this as your next side salad and let me know what you think! šŸ¤—

Pho YES!! šŸœ

This is an absolute fall favorite! It hits all the notes…a brilliant broth that hits every spot on the tongue in just the right way, filled with nutrients, and how can you not love all the veggies that make this dish irresistible?!

Well, maybe we’re biased. If you don’t like good food…stop reading. šŸ˜…

This is definitely one that takes some taste-testing to get everything just right. The more you make it, the better you get. And trust me, if you make it the first time and think it needs a little more of this and a little less of that, you’re going to nail it!

One of the reasons I love this is because you can completely customize it to your taste.

If you don’t want the rice noodles, leave them out. If you don’t like cilantro, take it out. Do what you want when it comes to the toppings!

I added green onions this time, which I don’t usually pair with this, but it made sense…and tasted incredible.

If you’re looking to add another soup, stoup or stew to your rotation, add this one! That’s if you like Vietnamese food, of course. šŸ˜…

Want the exact measurements of what I used? Drop a comment and I’ll be sure to share! šŸ¤—

But have you tried it?? šŸœ

So, I was just listening to some pretty impressive benefits of cloves from one of my favorites, Dr. Berg…big on gut health!

If you’re like me, when you think of cloves, you probably think of holiday meals and baking. Recently, I’ve been hearing more about cloves and oral health, but now it’s more. Guess my algorithm picked up on it. šŸ˜…šŸ¤¦šŸ»ā€ā™€ļø

Anywho…cloves contain eugenol, a compound with antioxidant, antimicrobial and anti-inflammatory properties that have been studied in oral health. There’s also some interesting research looking at cloves and digestion and gut health.

Definitely added to my invite list! šŸ‘€

I crushed 2–3 whole cloves and added them to my morning coffee. ā˜•ļø

Would you try it? šŸ‘‡šŸ»

šŸ”„ Slow Cooker Chicken Salsa Verde

When you love Mexican food as much as we do…you need a variety of recipes! šŸ™ŒšŸ»

This Slow Cooker Chicken Salsa Verde is creamy, flavorful, family-friendly and comes together with just a handful of simple ingredients. And the best part? The slow cooker does most of the work.

Ingredients:

3 large chicken breasts
1 medium onion, diced
3–4 cloves garlic, minced
Salt, to taste
1 tbsp chili powder
1 tsp cumin
1 jalapeƱo, diced
32 oz salsa verde
¾ cup whipped cottage cheese
12 corn tortillas, torn into pieces
1 cup Monterey Jack cheese

Your favorite toppings: avocado, cilantro, jalapeƱo, lime, etc.

Directions:

Add chicken breasts, diced onion, garlic, seasonings and salsa verde to your slow cooker.

Cook on HIGH for 3–4 hours or LOW for 7–8 hours, until the chicken is cooked through and tender.

Remove the chicken, shred it, and return it to the slow cooker. Stir everything together.

Mix in ¾ cup whipped cottage cheese for that creamy finish.

Then add your torn corn tortillas and gently stir them into the mixture. I recommend adding the tortillas toward the end rather than at the beginning so they soften without completely disappearing into the dish. I would give 5-10 min for the tortillas to soften. Turn off the slow cooker so it doesn’t turn to mush.

Top with Monterey Jack cheese, cover and let it melt.

Serve it up with your favorite toppings and enjoy! šŸ„‘šŸ‹ā€šŸŸ©

Easy. Family-friendly. One slow cooker. And a whole lot of flavor.

Save this one! šŸ’š

It’s going to take a little more coffee this week. ā˜•ļø

Reuben was out of town this weekend, which meant full-time mommy duty. ā¤ļø And honestly? There wasn’t a lot of time to reset for the week ahead.

But here’s the thing…

If you don’t carve out some time to reset and recharge, eventually it will work against you.

And I know…sometimes that reset isn’t a quiet weekend away or hours to yourself. Sometimes it’s 10 minutes with a cup of coffee, a walk around the block, sitting outside, or a few quiet minutes before everyone else wakes up.

It might be a very small window, but it still counts.

You don’t need a perfect reset. You just need a little something that fills your cup so you can keep pouring into everyone else.

We don’t always know how much time we have, so don’t keep putting yourself last. Find the little moments. Take the breath. Sit with the coffee. Step outside. Reset when you can.

For now, keep showing up. šŸ¤

ā€œCome with me by yourselves to a quiet place and get some rest.ā€
