Thai Peanut Chicken Noodle Bowls with Fresh Herbs
Ingredients:
For the Chicken
1 pound boneless, skinless chicken breasts or thighs, thinly sliced
1 cup peanut sauce, divided
1 clove garlic, grated
For the Cucumber Salad
2 cups thinly sliced cucumber (about 1 large cucumber)
1/2 cup thinly sliced red onion
2 tablespoons vegetable oil
1 tablespoon rice vinegar
Salt, to taste
1 teaspoon sugar
For the Noodles and Toppings
4 ounces vermicelli noodles
2 to 3 tablespoons crushed peanuts
Fresh herbs such as mint, cilantro, and basil
Instructions:
Place the sliced chicken in a bowl. Add half of the peanut sauce and the grated garlic, then mix until the chicken is well coated. Cover and let it marinate in the refrigerator for about 30 to 60 minutes.
While the chicken marinates, prepare the cucumber salad. In a bowl, combine the sliced cucumber and red onion with vegetable oil, rice vinegar, a pinch of salt, and the sugar. Toss well and set aside so the flavors can develop.
Heat a small amount of oil in a skillet over medium heat. Add the marinated chicken in a single layer and cook for several minutes without stirring so it browns nicely. Turn the pieces and continue cooking until the chicken is fully cooked and lightly caramelized.
Cook the vermicelli noodles according to the package instructions. Drain and rinse with cold water to keep the noodles from sticking together.
Divide the noodles between serving bowls. Arrange the cooked chicken and cucumber salad on top.
Sprinkle each bowl with crushed peanuts and fresh herbs.
Add a small splash of water or soy sauce to the remaining peanut sauce to thin it slightly. Drizzle the sauce over the bowls just before serving.

Balsamic Blueberry Goat Cheese Crostinis
Ingredients:
2 tablespoons olive oil
4 ounces goat cheese, softened
1 cup fresh blueberries
2 tablespoons balsamic glaze
1 baguette, sliced into 1/2-inch rounds
1 teaspoon honey (optional, for added sweetness)
Fresh thyme leaves or chopped basil, for garnish
Directions:
Prepare the Crostini
Toast the Bread: Preheat your oven to 375°F (190°C). Arrange the baguette slices on a baking sheet. Brush both sides lightly with olive oil. Bake for 8-10 minutes, flipping halfway through, until golden and crisp.
Assemble the Topping
Spread Goat Cheese: Once the baguette slices have cooled slightly, spread a thin layer of softened goat cheese on each slice.
Add Blueberries: Top the goat cheese with a few fresh blueberries.
Drizzle and Garnish
Drizzle with Balsamic: Drizzle balsamic glaze over the blueberries. For extra sweetness, drizzle with a small amount of honey, if desired.
Add Fresh Herbs: Sprinkle with fresh thyme leaves or chopped basil for a fragrant garnish.

Ingredients:
For the Dressing:
¼ cup mayonnaise
2 tablespoons balsamic vinegar
2 tablespoons extra-virgin olive oil
2 tablespoons maple syrup
½ teaspoon kosher salt (plus more to taste)
¼ teaspoon black pepper (plus more to taste)
For the Salad:
4 cups shredded green cabbage (about ½ head of cabbage)
1 large apple, sliced
½ cup thinly sliced red onion (about ½ of a medium onion)
½ cup dried cranberries (sweetened preferred)
2 tablespoons chopped fresh parsley
½ cup candied pecans, chopped (see notes for alternatives)
Directions:
1. Prepare the Dressing:
In a large bowl, whisk together the mayonnaise, balsamic vinegar, olive oil, maple syrup, kosher salt, and black pepper until smooth and well-combined.
2. Assemble the Salad:
Add the shredded green cabbage, apple matchsticks, thinly sliced red onion, dried cranberries, chopped fresh parsley, and candied pecans to the bowl with the dressing.

🌶️🍗 Chicken and Green Bean Stir Fry 🌶️🍗
Ingredients:
For the Chicken:
2 lbs boneless skinless chicken thighs, cut into cubes
3 tablespoons cornstarch
1/4 cup vegetable oil (plus extra as needed)
For the Vegetables:
2 bell peppers, sliced
1 cup steamed green beans
1/2 tablespoon minced garlic
1/4 teaspoon ginger (optional)
For the Seasonings:
1 teaspoon garlic powder
1 teaspoon crushed red pepper
1/8 teaspoon sesame oil
1 1/4 cups sweet chili sauce
Directions:
Marinate Chicken:
In a large bowl, toss the chicken cubes with 1 tablespoon of oil, garlic powder, and a pinch each of salt and pepper until well coated.
Cornstarch Coating:
Dust the chicken evenly with cornstarch.
Cook Chicken:
Heat the remaining vegetable oil in a large skillet or wok over medium-high heat until hot but not smoking.
Fry the chicken in batches, turning frequently, until golden and crispy. Remove and set aside on a plate.
Sauté Vegetables:
In the same skillet, sauté the bell peppers until just tender.
Add minced garlic (and ginger, if using), cooking until fragrant.
Combine and Simmer:
Return the chicken to the skillet along with the green beans, sweet chili sauce, sesame oil, and crushed red pepper.
