This Strawberry Crunch Banana Pudding is a fun and delicious twist on the classic banana pudding, featuring layers of creamy banana pudding, fresh bananas, and a crunchy strawberry topping. Perfect for a crowd or a special treat!

Ingredients:
For the Banana Pudding:

1/2 cup granulated sugar
1/3 cup cornstarch
1/8 teaspoon salt
2 3/4 cups whole milk
4 large egg yolks
2 tablespoons unsalted butter
1 teaspoon vanilla extract
For the Crunch Layer:

1 1/2 cups crushed strawberry-flavored cereal (such as Strawberry Crunch or similar)
1/4 cup granulated sugar
1/4 cup unsalted butter, melted
For Assembly:

4-5 ripe bananas, sliced
Whipped cream (store-bought or homemade)
Instructions:
Prepare the Banana Pudding:

In a medium saucepan, whisk together the granulated sugar, cornstarch, and salt.
Gradually whisk in the milk until smooth.
Cook the mixture over medium heat, whisking constantly, until it begins to thicken and come to a boil.
In a small bowl, whisk the egg yolks. Temper the egg yolks by gradually adding a few spoonfuls of the hot milk mixture to the yolks, whisking constantly.

Stir in the melted butter until the mixture resembles coarse crumbs.
Set aside.
Assemble the Pudding:

Ingredients:
For the Crust:

1 1/2 cups vanilla wafer crumbs (about 40-45 wafers, crushed)
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
For the Banana Pudding Cheesecake Filling:

4 (8 oz) packages cream cheese, softened
1 cup granulated sugar
1 cup sour cream
1/4 cup all-purpose flour
4 large eggs
1 cup heavy cream
1/2 cup banana pudding mix (instant)
1 tsp vanilla extract
2 ripe bananas, mashed
For the Whipped Cream Topping:

1 cup heavy cream
2 tbsp granulated sugar
1 tsp vanilla extract
Sliced bananas and extra vanilla wafers for garnish
