Want a bowl? Our own twist on albóndigas 😂 Albondiga Soup For your meatballs you will need 2 lbs. of ground beef, ½ cup of rice, ¼ of chopped mint, ½ tsp. cumin, ½ tsp. oregano, 1 tsp. salt, and 1 tsp. of ground pepper. Mix all ingredients together and form into meatballs. In a blender add 4 roasted tomatoes, 3 chipotles in adobo sauce, 3 garlic cloves, 1 tbsp. chicken bouillon and 1 ½ cups of water and blend until smooth. In a medium size pot bring to a boil 6 cups of water and add your meatballs. Boil for 10 minutes then add 2 corns on a cob cut into bite size. Boil for 7 minutes then add 3 chopped celery stalks along with 3 cubed medium size potatoes and 3 chopped bite size carrots. Boil for 7 minutes. Lastly add 2 chopped zucchinis then pour your sauce. Taste for salt and let it boil for another 3-5 minutes. @elcomalproducts Garnish with onion and cilantro and don’t forget your tortillas.
