Ingredients:
⢠Olive oil
⢠1 pound crimini mushrooms, sliced
⢠1 pound shiitake mushrooms, sliced
⢠Salt
⢠Black pepper
⢠4 tablespoon unsalted butter
⢠1 small onion, finely diced
⢠4 cloves garlic, pressed through garlic press
⢠1 tablespoon fresh thyme leaves, divided use
⢠1 teaspoon Italian seasoning
⢠Ÿ teaspoon white pepper
⢠½ cup dry sherry
⢠3 ounces all-purpose flour (about 10 tablespoons)
⢠6 cups warm chicken broth/stock
⢠1 cup heavy cream
⢠½ teaspoon soy sauce
Preparation:
- Place a large soup pot or Dutch oven over high heat; drizzle in about 3 tablespoons of the olive oil, and once hot, add in about â
of the sliced mushrooms, reserving â
of them for a moment.
- Add in a small sprinkle of salt and black pepper, and saute the mushrooms for about 8-10 minutes, until their liquid evaporates and they are browned; remove these mushrooms from the pot, and reserve them until the end.
- To this same pot add another 2 tablespoons of olive plus the butter, and once melted, add in the diced onion and the remaining â
of raw sliced mushrooms, and saute for about 6-8 minutes until softened and browned, and the liquid has mostly evaporated

INGREDIENTS
For The Chicken:
1 1/2 pounds (700g) boneless skinless chicken thighs (around 6-8 fillets)
1 teaspoon each onion powder and garlic powder
1/2 teaspoon each of dried thyme and rosemary
1/2 teaspoon salt
1/4 teaspoon cracked black pepper
2 tablespoons olive oil
For The Sauce:
1 tablespoon butter
8 ounces (250 g) sliced brown mushrooms
4 cloves garlic, minced (or 1 tablespoon minced garlic)
1 tablespoon fresh chopped parsley
1/2 - 1 teaspoon each of dried thyme and dried rosemary (adjust to your taste)
INSTRUCTIONS
Pat chicken thighs dry with paper towel and trim off excess fat. Combine the onion powder, garlic powder, herbs, salt and pepper. Coat the chicken evenly with the combined seasoning.
Heat 1 tablespoon of oil a large pan or skillet over medium-high heat and sear chicken thighs in batches until browned on each side and no longer pink in centre (about 8 minutes each side, depending on thickness). Add remaining oil if needed for second batch. Transfer to a plate; set aside and keep warm.

Ingredients
4 skinless boneless chicken breasts 1/2 cup fresh parsley finely chopped 1/2 cup fresh cilantro finely chopped 2 green onions green parts only and finely chopped 2-3 cloves garlic finely chopped 1 red chili deseeded and finely chopped 1/2 tsp dried oregano 1/2 tsp dried basil 1/3 cup olive oil 1 tbsp red or white wine vinegar Kosher salt and ground pepper to taste Instructions To a small bowl, add the parsley, cilantro, onions, garlic, chili, oregano and basil. Add the oil, vinegar, salt and pepper and mix well to combine. Allow the flavors to meld for 10 minutes. Pour about â
of the chimichurri sauce over the chicken and toss to completely coat. Reserve the remaining chimichurri to serve with the chicken; make sure it doesnât touch the raw meat. Allow the chicken to marinate for 15-20 minutes. Preheat a grill pan or your outside grill on medium-high heat. Add the chicken and cook for 6-8 minutes per side, or until fully cooked through. Serve with the remaining chimichurri sauce and enjoy!

The keto diet and mental health: how closely should the food
Lemon & herb baked salmon with asparagus & crispy crushed potatoes
This easy turkey Cobb salad recipe takes just 20 minutes to make and itâs perfect for the keto diet.
Ingredients (serves 2)
2 salmon fillets
250g jersey royal potatoes
A small bunch of fresh dill
A small bunch of fresh parsley
1 large lemon
2-3tbsp olive oil
1-2tsp capers, crushed
8(ish) asparagus spears
Salt & pepper
K**b of butter
Method
1.Preheat the oven to 180C. Wash the potatoes and slice any in half that are extra large. Add these to a roasting tin with some olive oil, salt & pepper and roast in the oven for 25-30 minutes until crispy, tossing half-way through.
2.Finely chop the herbs. Add the juice and zest of the lemon into a small mixing bowl along with 2tbsp of olive oil, capers, chopped herbs and black pepper and stir to combine.
3.Place the salmon into an oven proof dish and drizzle the herb oil evenly over both fillets. Add a and k**b of butter if desired to get an extra golden coating. Sprinkle a pinch of salt over each fillet. Roast in the oven for 10-15 minutes depending on their size, or until just pink inside and easily flaked with a fork.
4.With around 6-7 minutes to go, toss the asparagus spears in with the salmon & coat in the oil. Continue to roast until both the salmon and asparagus are nicely roasted.
5.Remove the potatoes from the oven and divide onto your serving plates. Lightly âcrushâ with the back of the fork to release the fluffy insides.
6.Top the potatoes with the asparagus and flake over the salmon. Drizzle over the remaining oils from the roasting tray and let it sink into those fluffy potatoes.
