START SOMETHING……
You fill it in, Healthy, or Athletic, or purposeful, or New, etc.
It’s a new campaign from USANA to motivate people to start something they always have wanted to do or are just thinking of but aren’t realy taking that step.
Today we started with the new 7 day Jumpstart program. We choose the plant based proteins.
The kit comes with a guide on what to eat and plenty of snacking options. I’m posting this because I’m excited about it. No cooking, no dirty pans, hardly any dishes, no pondering on ‘what’s for dinner’ so what’s not to like 😊
Today I did roast walnuts and made a strawberry and balsamic vinaigrette for our salads. It’s fun when you do this with a partner 😊

Recipe for this one:
1 egg
1/8 C water
1/8 C applesauce
1 scoop Chocolate Nutrimeal
1 scoop Creamy Caramel Nutrimeal
1 Tbsp almond flour
1 tsp cocoa
1 tsp instant coffee
1 tsp baking powder
Directions:
Mix the egg, mix in water, mix in applesauce.
Add dry ingredients one at a time and mix till blended ( you can add them all at once too)
Poor into a bowl that holds at least 2 Cups, or smaller for more servings.
Set microwave for 2 minutes and watch carefully as it cooks. In my microwave it took 90 seconds. Each microwave is different just use the 90 seconds as an estimated time. The cake will rise out of the bowl and will deflate when the microwave stops, it’s supposed to do that. Use a knife around the edge to loosen the cake and turn over on a plate. I melted some chocolate for the drizzle. The powdered sugar is for the effect but I usually don’t use that 😊

How about a nice warm moist healthy Pumpkin Spice cake in the morning after a workout?
Now that’s what I call a reward ❤️
Today I made the cake with different ingredients then the chocolate one I made yesterday.
For this one I used:
Wet ingredients:
1 egg
1/4 C milk
1/4 C applesauce
Dry ingredients:
2 scoops Pumpkin spice Nutrimeal
1 Tbsp almond flour (or other flour)
1 Tbsp Wheat Germ *
1 Tbsp Ground flaxseed *
1 tsp baking powder
Pinch of salt
Some mini chocolate chips (you don’t have to use these)
*If you like to leave these ingredients out I think you should leave the milk out also. As of today 11/21 I have not tried this yet. I will change this writing as soon as I try that (I think next week)
Directions:
Info: I use the 2 C size bowl but you can mix everything first and dived the batter over smaller size bowls/cups, you will need to reduce the cooking size for this.
In a 2 Cup bowl or mug beat the egg with a fork to blend it.
Add the milk, apple sauce, and mix.
Add all dry ingredients and mix until it’s all blended well and you don’t see any lumps.
Cook in microwave for about 2 minutes. Time depends on microwave and bowl size that you use. The cake will become big and will grow out of its bowl which is fun to see, but will collaps as soon as you open de microwave but your cake will keep its shape. Be careful when taking the bowl out, it is very hot!!!
You can check to see if the cake is done by putting a knife in center, if it comes out wet then put it back in for another 10 seconds or so. Turn the cake over on a plate for serving. You can add fruits or whipped cream if you want to serve it as a healthy dessert.

This will take you maybe 5 minutes.
I saw this recipe on the page of a business partner of mine and just had to try it 😊 It’s made in a big mug but I used a 2 C bowl instead. It’s fun in a mug but it’s very hot and stays hot for quite awhile. You can do it in a mug but I suggest you turn it out onto a plate for faster cooling.
So far I probably made 5 or 6 of them with a small change every time to make it a “little better” or maybe I should say that I like it better 😊
It’s originally called ‘better then s*x in a mug” (I’ll keep my opinion about that to myself but maybe I need to have a conversation with whoever came up with that 😂)
I say start with my recipe and make changes to it until it’s what you like, you might like it sweeter than I do so you can add a sweetener to it or more Maple syrup or honey. The banana gives moisture to the cake but can be omitted if you don’t have one on hand. I think Applesauce instead of banana can work also, just keep on trying things.
Next I’ll add some peanut butter powder to it and I’ll make it with the Creamy caramel and the Pumpkin spice Nutrimeals also.

3 inch piece mashed banana
Dry ingredients:

2 tsp unsweetened cocoa powder
A Pinch of salt.
1-2 tsp mini chocolate chips.
In a 2 Cup bowl or mug (or devide it in 2 smaller bowls/cups) beat the egg with a fork to blend it.
Add the milk, mashed banana, syrup and mix.
Add all dry ingredients and mix until it’s all blended well.
Cook in microwave for about 90 seconds. Time depends on microwave and bowls that you use. The cake will become big, which is fun to see, but will collaps as soon as you open de microwave but your cake will keep its shape. You can also use small Ramekins fir smaller servings, I’d say fill them up about 3/4 full and reduce the microwave time to 60 seconds first.

Very tasty Butternut Squash, Spinach & Chickpea Curry with Turmeric Blend.
This super-simple curry gets lots of flavor – and an anti-inflammatory punch – from a DIY curry blend that starts with turmeric. Next time I’ll add more Squash. I’ll put the link to the recipe in the first comment. Don’t be afraid I asked questions, I’ll be happy to answer them.

Sometimes I take 3 hours to make something yummy and destroy my kitchen, and sometimes it only takes me 3 minutes without destroying my kitchen 😂
This Mint cocoa Almond milk creamer is delicious in the Chocolate Nutrimeal. Add as much as you want to get the mint flavor you want. I added about 1 Tbsp.
