French Onion Grilled Cheese 🧀🍞
Ingredients:
2 large onions, thinly sliced
2 tablespoons unsalted butter, plus more for spreading on the bread
1 tablespoon olive oil
1 teaspoon sugar
1/2 teaspoon salt
1/4 cup beef broth or vegetable broth
1 tablespoon balsamic vinegar
8 slices of thick bread (sourdough or your choice)
1 cup gruyère cheese, shredded
1/2 cup mozzarella cheese, shredded
Fresh thyme leaves for garnish
Directions:
In a large skillet over medium heat, melt 2 tablespoons of butter with olive oil. Add the onions, sugar, and salt. Cook, stirring occasionally, until the onions are deeply caramelized, about 25-30 minutes. Add the broth and balsamic vinegar, and cook until the liquid is evaporated. Remove from heat and set aside.
Butter one side of each bread slice. On the non-buttered side, layer a generous amount of gruyère cheese, followed by a spoonful of the caramelized onions, a sprinkle of mozzarella cheese, and a few thyme leaves.
Top with another slice of bread, buttered side out, and press down gently.
Heat a skillet or griddle over medium heat. Grill the sandwiches until golden brown on each side and the cheese is melted, about 3-4 minutes per side.
Serve immediately, garnished with additional thyme leaves if desired.

Wendy’s Inspired Chili
Ingredients:
2 lbs ground beef
1 (29 oz.) can tomato sauce
1 (29 oz.) can kidney beans (with liquid)
1 (29 oz.) can pinto beans (with liquid)
1 cup diced onion
1/2 cup diced green chili
1/4 cup diced celery
3 medium tomatoes, chopped
2 teaspoons cumin powder
3 tablespoons chili powder
1 1/2 teaspoons black pepper
2 teaspoons salt
2 cups water
Instructions:
In a large skillet, brown the ground beef over medium heat. Drain off the excess fat.
Transfer the browned beef into a large pot.
Add the tomato sauce, kidney beans, pinto beans, onion, green chili, celery, and tomatoes.
Season with cumin, chili powder, black pepper, and salt.
Pour in 2 cups of water and stir well.
Bring the mixture to a boil, then reduce heat and simmer for about 1 to 1 1/2 hours, stirring occasionally.
Adjust seasoning to taste before serving. Enjoy with your choice of toppings like cheese, sour cream, or green onions.
