🍯 Did you know local honey doesn’t always taste the same. Unlike mass-produced honey that’s blended for consistency, truly local honey can change from one harvest to the next. The flavor, color, and aroma depend on what the bees are working at the time. Here on the Treasure Coast, different blooms throughout the year can produce honey that ranges from light and mild to darker, richer, and more robust.

That’s one of my favorite things about keeping honey local — each harvest is a snapshot of what was blooming around the apiary. Our bees are heading into the fall flow now, and we’ll be watching closely to see what they bring in. 🐝

Brazilian pepper is getting close here on the Treasure Coast. 🌿🐝
The flower buds are developing fast, and I’ve already put honey supers on the hives in preparation for the upcoming nectar flow.
Brazilian pepper is one of our major fall nectar sources in South Florida, so now I’m watching these buds closely for the first flowers to open.
I’ll keep posting updates as the bloom progresses and show what the colonies do once the flow really starts.
