Our usual Sunday dinner looked a little different tonight.
Instead of cooking at home, Joe and I enjoyed dinner together at Blackstone in Putnam. A healthy lifestyle is not about avoiding restaurants or trying to be perfect. It is about creating habits that support your health while still making room for good food, connection, and experiences you enjoy.
Balance is part of the lifestyle.
Chuck’s story does not begin with the 190 pounds he lost. It begins with the honesty to say he is a food-aholic.
When Chuck started our THRIVE program almost 2 years ago at 465 pounds, he was short of breath and had difficulty walking. He had also spent much of his adult life doing what so many people have done; losing weight, regaining it, and beginning again.
For the past 21 months, Chuck has been eating real food and learning a different way to understand hunger, nourishment, and his relationship with food.
In a climate where weight loss is often reduced to the latest medication, Chuck’s story reminds us that medication, when appropriate, is only one helpful tool. Lasting change requires education, support, honest self-reflection, and the willingness to live differently over time.
When Chuck says he has “counted nothing", he does not mean that nothing was required of him. He means that he stopped living by calories, points, and complicated formulas. Instead, he learned to prioritize real food, protein, healthy fats, and choices he could continue making.
His result is exceptional, and it is his individual result, not a promise of what someone else will lose. But the most meaningful part of his story cannot be measured only in pounds. It is the distance between a man who struggled to walk and the man standing before this room, offering hope to someone else.

Metabolic flexibility is your body’s ability to adjust which fuel it relies on more heavily as food availability and energy needs change.
In this excerpt, Dr. Joe uses a simplified explanation of what many people experience when their body is accustomed to frequent incoming carbohydrate: irritability, cravings, or feeling as though they need to eat again every 3-4 hours.
The body is not using only sugar or only fat at any one moment. The balance between these fuel sources change throughout the day.

We kept it simple tonight with locally made smoked chicken breast and cheddar cheese, and butter roasted sweet potato rounds. Such an easy and delicious meal at home. 😋
Eating well does not always have to be complicated. Simple, satisfying food is exactly what you need sometimes…
And apparently, someone still needed to check the pantry afterward.😆
