🍋 Garlic Butter Salmon Bowl Recipe

Perfect for a healthy, high-protein dinner idea 💚
✨ Ingredients: • 1 salmon fillet
• 1 cup cooked white rice
• Fresh asparagus
• Zucchini slices
• 2 tbsp butter
• 2 garlic cloves (minced)
• Lemon juice
• Parsley flakes
• Salt & black pepper
• Olive oil
👩🏽‍🍳 Instructions:
Season salmon with salt, pepper, and a little lemon juice.

Heat olive oil in a pan and cook salmon 4–5 minutes per side until golden.

In the same pan, add butter and garlic. Spoon the sauce over salmon.

Sauté asparagus and zucchini until tender and slightly charred.

Add rice to your green plate, then place salmon and veggies beautifully on top.

Drizzle extra garlic butter sauce and garnish with parsley.

Being a single mom of 4, working a 9–5, and still choosing a healthy lifestyle hasn’t been easy. Some days are messy, exhausting, and far from perfect… but I keep showing up anyway.

My mornings start early before everyone else wakes up just to give myself a little time to breathe, stretch, and reset. Throughout the day, I make small choices that add up: drinking more water, moving my body when I can, and choosing meals that fuel me and my kids.

Is it perfect? Not at all.Is it worth it? Every single time.

I’m doing this not just for me, but so I can be present, strong, and healthy for my children. This journey is about progress, not perfection and I’m proud of every step forward.

🧀🍗 Cheesy Asparagus Stuffed Chicken
🛒 Ingredients (Serves 2–3)
2 large chicken breasts
1 bunch fresh asparagus (trimmed)
1 cup shredded mozzarella (or provolone)
2 tbsp cream cheese (optional for extra creaminess)
2 tbsp olive oil
3 cloves garlic (minced)
1 tsp paprika
1 tsp Italian seasoning
Salt & black pepper (to taste)
½ cup chicken broth
¼ cup grated parmesan
Optional: red pepper flakes (for heat)
🔪 Instructions
1. Prep the chicken
Slice each chicken breast horizontally to create a pocket (don’t cut all the way through).
Season inside and outside with salt, pepper, paprika, and Italian seasoning.
2. Make the filling
Mix mozzarella + cream cheese + a little garlic.
Stuff the chicken with asparagus + cheese mixture.
Secure with toothpicks if needed.
3. Sear
Heat olive oil in a pan over medium-high heat.
Sear chicken 3–4 minutes per side until golden.
4. Bake
Transfer to your green baking tray (like your image 💚).
Pour in chicken broth + remaining garlic + parmesan.
Bake at 375°F (190°C) for 18–22 minutes until cooked through.
5. Finish
