Okkkk listen up because this is hands down one of my top five favorite salad recipes 🙌🏼 quinoa tabbouleh salad 🫒🍅🥒🍋🥗
The great thing about quinoa is it is a GREAT source of protein if you are plant-based. This salad is great hot or cold (I always make the quinoa and then cool it for a few hours before adding all the veggies).

• 2 cups cooked quinoa
• one large seedless cucumber, cut into quarters
• 1 pint grape or cherry tomatoes, halved
• handful or two of kalamata olives, chopped
• 1/4 cup parsley, chopped
• juice of 1 lemon
• good dose of olive oil or avocado oil
• feta cheese (can make it vegan without!)

Before & After of a truly scrumptious dish I decided to make on Wednesday despite a LONGGGG work day.
I love meals where the dishes can cook simultaneously and all you have to do is kick back and wait for the timer 🤗✨

Slowly finding my way back to my personal practice. I’ve been experiencing some separation from the joy of this practice while I’ve been facing some old trauma, which breaks my heart as it has offered me so much over the last two years. Day by day I am finding the joy in the movement, the breath and the meditation, while reminding myself my love for teaching still runs soooo deep. Reminding myself to be gentle and compassionate towards myself rather than judgmental (as that’s exactly what I would tell my students). Most importantly, reminding myself this practice will help me heal from my trauma, and I must allow myself to give into it. ❤️
