Let’s talk healthy hair! If we are all here for healthy hair let us remember that what we eat has a tremendous effect on the health and growth habits of our hair follicles and strands. Not only do certain foods stimulate hair growth but they also help balance our hormone production. Sweet potatoes 🍠 are one of those foods! Here’s a healthy dish that incorporates this magic root vegetable. Happy 🌱💚

This Thai Curry Vegetable Soup is packed with vegetables, spicy Thai flavor, and creamy coconut milk. Ready in about 30 minutes!

Ingredients:

* 2 Tbsp neutral cooking oil* ($0.04)
* 2 cloves garlic ($0.16)
* 1 Tbsp grated fresh ginger ($0.05)
* 2 Tbsp Thai red curry paste ($0.62)
* 1 small sweet potato (about 1 lb.) ($1.61)
* 1 bunch baby bok choy ($0.55)
* 4 cups vegetable or chicken broth ($0.52)
* 1 13oz. can coconut milk ($1.29)
* 1/2 Tbsp fish sauce ($0.07)
* 1/2 Tbsp brown sugar ($0.02)
* 3.5 oz. rice vermicelli noodles ($0.39)
GARNISHES (OPTIONAL)
* 1/2 red onion ($0.29)
* 1 lime ($0.17)

The June 19 announcement came more than two and a half years after Abraham Lincoln issued the Emancipation Proclamation on January 1, 1863. So technically, from the Union's perspective, the 250,000 enslaved people in Texas were already free—but none of them were aware of it, and no one was in a rush to inform them.

According to historian James Smallwood, many enslavers deliberately suppressed the information until after the harvest, and some beyond that. In July 1867 there were two separate reports of enslaved people being freed, and one report of a Texas horse thief named Alex Simpson whose enslaved people were only freed after his hanging in 1868.
