👑🐝 CAN YOU SPOT THE QUEEN?

Hive inspections sometimes feel like the world’s hardest game of Where’s Waldo? — except everything is moving. 😂

Thousands of bees can cover a single frame, and somewhere among them we’re looking for ONE very important lady.

Once you know what you’re looking for, the queen starts to stand out. Her abdomen is longer than the worker bees around her, she can appear darker, and there’s something about the way she moves through the hive — she walks with conviction. 👑

But here’s the thing: we don’t have to find the queen during every inspection.

What’s even more important is finding evidence that she’s there and doing her job. Fresh eggs, developing larvae, and healthy brood tell us a lot about what’s happening inside the colony — even when Her Majesty decides she doesn’t feel like making an appearance. 👀

Still…

There’s something incredibly reassuring about actually putting eyes on the queen. Every. Single. Time. 💛

🍯 A little behind-the-scenes peek at what we’re preparing for Honey of the Southeast!

Today we’re carefully packaging Orange Blossom Honey from Honey Feast Apiary in Clermont, Florida—one of the beautiful varietal honeys guests will experience during our upcoming guided honey tasting at Windcrest Farm on August 20 & 22.

The Giddy Bee is a small honey operation, and while we’re incredibly proud of the honey our own bees produce, there’s an entire world of honey we simply can’t make here in South Carolina.

And that’s part of the magic. 🐝

We intentionally source exceptional varietal honeys from trusted beekeepers and apiaries across the Southeast so we can explore how place, season and botanical source show up in the jar.

Orange Blossom is one of those honeys. 🍊🍯

During Honey of the Southeast, we’ll taste our way through six distinctive honeys and learn what makes each one different—from aroma and color to texture, flavor and finish.

And we’re making this experience a little more special: the honeys featured in the tasting will be available for purchase exclusively to class participants. So if you fall in love with this Orange Blossom? You’ll have the opportunity to take some home.

Tasting Table Tuesday 🍯🐝 | Breakfast Edition

Most mornings, this is how I start my day: vanilla yogurt, fresh berries, banana, a little granola… and then two of my favorite gifts from the hive — a pinch of bee pollen and, of course, a drizzle of honey. 🍓🍌🍯

Honey tasting doesn’t always have to mean sitting down with a tasting spoon and analyzing flavor notes. Sometimes it’s simply learning how to bring different honeys into the foods you already enjoy.

I love adding just a small pinch of bee pollen to my breakfast for a little extra texture and a naturally nutrient-rich boost from the hive. And honey? Well… I’m probably biased, but I’m convinced it belongs on just about everything. 😂🐝

The honey I’m using today is what I call House Honey. It’s the jar where I collect the last little bits from different batches — the honey that’s too good to leave behind, even when there isn’t quite enough for its own jar. The result is always a little different, with a blend of flavors from whatever I’ve been enjoying lately. It may not have a formal varietal name, but it’s one of my favorite kinds of honey because it’s a delicious snapshot of the hive.

Try changing up the honey you drizzle over your yogurt, too. A light floral honey can taste completely different alongside berries than a darker, richer varietal — and even a jar of House Honey can turn an everyday breakfast into its own little tasting experience.

This is what Tasting Table Tuesday is really about: slowing down, tasting intentionally, and discovering just how wonderfully diverse honey can be.

🐝🐶 Apparently, I have a beekeeper in training.

If you don’t think Dexter is a beekeeper at heart, just look at that intensity. 😂

This hound dog will sit outside the bee yard completely mesmerized—quiet, patient, and watching every bee come and go. Honestly, he observes them exactly like a beekeeper should. No fuss. No bothering the girls. Just sitting back and paying attention. I think he gets it. 🐝

Now…the other three dogs are a different story.

One wants absolutely NOTHING to do with the bee yard. I’m assuming she learned a very important lesson involving a stinger at some point and has decided that bees are best admired from a considerable distance. 😂

Another keeps his distance…but apparently still thinks the occasional flying bee looks like something that should be caught out of the air. 🤦‍♀️ We’re working on that.

And the youngest? He hasn’t quite figured out what he thinks about the bees yet. He just knows he loves hiding in the ivy near the apiary and watching Mom do whatever strange thing Mom is doing today.

But Dexter? Dexter watches the hives like he’s waiting for me to hand him a veil and a hive tool.

I have a confession: dogs were my first love, long before bees. ❤️

I have four rescues who bring me every bit as much joy as my bees do. Life with dogs can be just as rewarding, entertaining, unpredictable, and humbling as life with bees.

So when those two worlds overlap—and one of my dogs decides he might just be a beekeeper too—I can’t help but share it with you.

Good boy, Dexter. Keep watching the girls. 🐶🐝💛

Life has been life-ing lately, and with some family things needing our attention, our little space at White Street Station didn’t get quite the love it deserved for a minute.
