Plantain is one of those plants that once you know her you cannot unknow her. She is absolutely everywhere — every continent except Antarctica, every footpath crack, every lawn, every neglected corner. She follows humans like a faithful companion. Native Americans called broadleaf plantain White Man’s Footstep because she spread across the continent with European settlers, appearing in every patch of disturbed soil they left behind.

Most people spend their weekends pulling her out.

The psyllium connection is the one that stops people in their tracks. Psyllium husk — the supplement sold for gut health, IBS and cholesterol in every health food store — comes from a species of plantain. Same genus as your garden w**d. And your garden plantain seeds do something remarkably similar — soak them and they swell into that same gelatinous gel.
