Does hot coffee destroy olive oil’s polyphenols? ☕️🫒

In one laboratory study, key olive-oil phenolics heated at 194°F for 30 minutes experienced losses ranging from under 1% to approximately 27%, depending on the compound and oil tested. BUT, your coffee exposes the olive oil to heat for only a few minutes.

They knew it worked long before they knew why.

In this clip, Gordon, Ashley, and Joe explore the Ebers Papyrus, an ancient Egyptian medical text that documented topical formulas using olives and olive oil for abrasions, bruising, and muscle soreness.

Thousands of years later, modern science identified oleocanthal, a naturally occurring polyphenol found in high phenolic extra virgin olive oil.

The ancient Egyptians did not know the compound’s name or understand the chemistry behind it. They simply recognized the value of the olive and continued using it.

Sauté it. Roast with it. Fry with it. Cook with it. High quality extra virgin olive oil is naturally rich in monounsaturated fats and antioxidant compounds that help protect it against oxidation and give it impressive stability during cooking.

And depending on its quality, freshness, and composition, olive oil can have a smoke point well within the temperatures used for most everyday cooking. Of course, you shouldn’t intentionally burn any oil. If it is heavily smoking, the heat is too high.
