In our latest Q&A, our Board Certified Functional Dietitian Dana Bosselmann explores the connection between the vibrant colors on your plate and the specific nutrients they provide.

The question: Does the color of food indicate the types of nutrients it contains?

The answer: Yes. The pigment of a fruit or vegetable is often a direct indicator of its unique phytonutrient profile. By "eating the rainbow," you ensure a broad spectrum of support for your body’s various systems.

Here's how:

🍅 Red (Tomatoes, Red Peppers): Contains lycopene, which is known to support heart health.

🥕 Orange & Yellow (Carrots, Squash): Rich in carotenoids, vital for immune function and vision.

🥦 Green (Leafy Greens, Broccoli): High in chlorophyll and compounds that support detoxification and bone health.

🍆 Blue & Purple (Blueberries, Eggplant): Rich in anthocyanins, which provide significant support for brain health.

The question: How does food prep support digestion?

The answer: Something called cephalic digestion. This is a neurological process where the sight and smell of food while cooking signal your body to prepare for the meal ahead.

Through the vagus nerve, your body initiates several key responses:

💜 Activation of digestive enzymes

Well, it depends on what's on your plate! Here's the quick breakdown:

🔥❌: Vitamins C and B are the most delicate. They start to break down at higher temperatures, specifically above 170°F.

🔥✅: Some foods, like tomatoes, actually become more nutritious when cooked. Heat makes certain phytonutrients more bioavailable, meaning they're easier for your body to absorb.
