Lebanese Lentil Soup!
____
It was -8*C in NJ today, and I was so thankful I made and packed the hearty soup to work. It isn't the best to look at, but oh, my - It was absolutely lovely to eat.

1 cup of orange lentils
1 cup of yellow lentils
- bring to boil & let simmer for 20 minutes.

Add 1/2 cup of carrots & spices
Spices: tablespoon of cumin, teaspoon of turmeric, dash of black pepper & salt to taste.

On the side, dice a medium onion (rough dicing). And fry in a decent amount of oil (1/2 a cup+). Once golden, pour oil and onions into pot with lentils and carrots.

Cook for 40 minutes. Emulsify for the consistency you want. Squeeze a lemon and pour at the end. I let cook all together for another 5 minutes. And enjoy 😉 🫠🤤
