4 large boneless skinless chicken breasts
salt and pepper to taste
1 teaspoon garlic powder
1teaspoon paprika
4tablespoons goat cheese
16 stalks asparagus firm ends cut off
4 slices mozzarella cheese
1tablespoon olive oil
1 tablespoon balsamic vinegar
12 toothpicks
INSTRUCTIONSš„
Preheat oven to 425 degrees F.
Season both each chicken breast with salt and pepper to taste, and then garlic powder and paprika.
Cut each chicken breast in half length wise. Be careful not to cut all the way through. You're just making a place to put the cheese and asparagus.
Spread 1 tablespoon goat cheese into the inside of each chicken breast pocket.
Top with 4 stalks asparagus (sprinkle lightly with salt and pepper), and then top with the mozzarella. You might need to fold the mozzarella to make sure not too much is sticking out (it will stick to the pan if so).

Ingredients :-
1 pound London broil steak sliced thinly into small strips
2 Tablespoons olive oil or vegetable oil
1 pound broccoli cut into 6 cups of florets
2 teaspoon sesame seeds optional garnish
For the Sauce:
1/2 cup hot water
6 Tablespoons low sodium soy sauce or gluten free Tamari or coconut aminos
2 Tablespoons sesame oil
2 Tablespoons packed light brown sugar
1 1/2 Tablespoons corn starch
4 cloves garlic minced
2 teaspoons ginger paste or fresh ginger, grated
1/2 teaspoons black pepper
Sesame seeds optional
Instructions
If serving with rice, start cooking it first per the package directions.
Slice steak into think small strips
In a small bowl, combine the stir fry sauce ingredients and mix well. Then set aside.
Add a 1 Tablespoon of sesame oil to a large skillet heat on medium heat.
Add broccoli florets and 2 tablespoons of water and cook for approximately 5 minutes covered until broccoli turns bright green. Then place in a bowl while cooking steak.

INGREDIENTS
CHICKEN MARINADE
1 ½lbs bonesless skinless chicken breast, cut into 1 ½ inch cubes
½ cup low sodium soy sauce
2 tbsp extra virgin olive oil
2 tbsp honey
1 tsp dried thyme
1 tbsp fresh minced garlic or ½ tsp garlic powder
½ tsp dried oregano
¼ tsp dried sage
½ tsp fresh ground black pepper
1 bay leaf
1 tsp red pepper flakes
1 can of beer (Guinness stout or beer of choice)
VEGETABLES
3 bell peppers, trimmed, stems removed, and sliced into squares
1 zucchini, ends trimmed, cut into ½ inch slices
Cloves from 1 head of garlic, peeled
1 red onion, peeled, sliced into squares
2 tbsp olive oil
1 tsp kosher salt
½ tsp black pepper
INSTRUCTIONS
Clean chicken breast and cut into roughly 1 ½ inch cube pieces
In a large bowl add all the ingredients (minus the beer) and whisk together. Once mixed, pour in beer, and stir to combine. Add in chicken, mix, cover with a lid or wrap, and refrigerate for minimum 2 hours or overnight.
While chicken is marinating, slice up all of your vegetables that are going onto the skewers. Once done, drizzle olive oil, salt and pepper, and mix to coat the vegetables.
