Tepache is an ancestral drink originating from Mesoamerica, made through the fermentation of pineapple water, aided by microorganisms present on its skin. However, in ancient times, this drink was prepared with crushed corn.
The term ‘tepache’ comes from the Nahuatl ‘tepatli’, referring to a drink made from corn. It is also related to the word ‘tepachoa’, meaning ‘crushed or ground with a stone’. The root ‘tepach’ is essential to understanding the original meaning of ‘tepache’, which refers to a drink made with crushed corn.
Tepache is produced in different regions of Mexico, each with its own variant and traditional. Some of the most well-known varieties include pineapple tepache, guava tepache and mango tepache.

Hoy hicimos una receta deliciosa de sopa de tomate muy sencilla, logrando en un solo plato muchos nutrientes y probióticos que a nuestra microbiota le encantan.
Receta:
* 8 tomates
* 1 cebolla blanca
* 2 zanahorias
* 1 cabeza entera de ajos
* 3 cucharadas de aceite de oliva
* sal de mar
* pimienta
* mezcla de especias italianas
* albahaca fresca
Preparación
Pre calienta el horno a 200 grados C
En una charola de hornear coloca los tomates partidos en 2, la zanahoria previamente pelada y partida, la cabeza de ajo 🧄 partida de la parte de arriba, la cebolla partida en 4 pedazos, el albahaca, sal y pimienta, viertes el aceite de oliva y lo metes al horno por 45 min.
Al salir de horno lo licúas con una cucharada de ajos fermentandos con miel, cúrcuma y jengibre hasta que todo quede bien integrado y molido. Puedes colarla o llevarla directamente al plato.
Colocas un topping de kefir, una cucharada de chucrut, albahaca fresca y líneas de aceite de oliva.
Lo puedes acompañar con un sándwich de queso mozzarella con pan de masa madre.
