☆ Chicken Rice Bowls ☆

• ½ cup Jasmine rice $0.40
• 1 Lebanese cucumber $1.47
• ½ punnet tomatoes $1.50
• 1 red onion $0.40
• 1 avocado $1.20
• 1 BBQ Chicken $0*
• Pantry Staples: tumeric, smoked paprika, chicken stock cube, sugar, salt, white wine vinegar, garlic sauce or mayonnaise

- in a small bowl, mix ½ tsp salt, ½ tsp sugar, 3 tbsp white wine vinegar. Thinly slice red onion, and add to bowl. Mix with hand, slightly scrunching onion while mixing. Top up with water and let sit.
- in a small pot, bring to boil 1 cup water, ½ tsp tumeric, ½ tsp smoked paprika, and 1 chicken stock cube. Once boiling, add rice and place lid on. Reduce heat to low and cook until water is absorbed. Turn off heat and let sit for a further 10 mins.
- pull apart chicken, discarding any bones
- cut cucumber into cubes and halve the tomatoes
- cut avocado in half, remove seed & skin, and thinly slice.
- drain onion and gently squeeze to remove any liquid.
- make bowls by dividing each ingredient amongst bowls, and top with a dollop of garlic sauce.
