Fresh shell beans are a seasonal delicacy you should NOT pass up. They’re quick cooking, best when simply prepared, and the creamiest beans you’ll ever taste. These are black eyed peas, but you’ll find many other varieties like cranberry and cannellini at local farmers markets.

Beyond their great flavor, beans are high in protein and one of the best sources of resistant starch—a fiber like substance that feeds friendly gut bacteria. These tiny microbes then thank us by keeping colonic cells healthy and happy. 🦠🦠💪🏻

This chickpea curry salad is the star of today’s lunch. The homemade mayo makes it creamy (and super healthy) and the Thai curry spices bring the heat.

Mayo is a snap to make yourself...into a jar or measuring cup add a room temp whole pastured egg, splash of lemon juice, dollop of Dijon, s&p, an 3/4 cup of quality cold-pressed olive oil. Emulsify with a stick blender on low speed. Keeps in the fridge for a week.

Sardines can be an acquired taste, but perseverance will pay huge nutritional dividends, including omega-3 fats and calcium (choose bone-in). Adding acid, fat and fresh elements help balance the taste. This sardine salad is balanced with crisp salad greens, yolky soft cooked eggs, capers, harissa/lemon/evoo marinated red onion, and leftover creamy cooked beans. Satisfying for lunch or dinner. 🐟

A perfect post yoga breakfast smoothie starring fresh beets (with major antioxidant, anti-inflammatory and detoxing powers), orange and banana. Add in some nut butter, flaxseed, grass-fed collagen powder and ground spices like cardamom, cinnamon and ginger. Wow—a naturally sweet flavor explosion!! 😍😋🧘‍♀️

Packaged granola doesn’t hold a candle to homemade. It’s easy to make and YOU control the ingredients. The coconut oil and dark maple syrup here are key to this addictive version so don’t substitute.

4 cups GF rolled oats
1 1/2 cup chopped raw nuts
1 1/2 cup seeds (try h**p, sesame, pumpkin)
3 tbsp melted unrefined coconut oil
2/3 cup dark maple syrup
pinch sea salt

Mix ingredients well, spread on baking sheets and bake at 350 for 20-25min until golden. Cool then store in airtight glass jars.

Don’t be tempted to reserve rhubarb for sweet desserts only. This rhubarb-lentil-sweet potato stew is a palate powerhouse! Assertive Indian spices work nicely with rhubarb’s complex citrusy notes. Nutritionally speaking, it’s a tasty way to add more calcium, potassium and fiber to your life! 🍛😋
