SIMPLE Watermelon + Cucumber + Feta Salad 🍉🥒🌞

Both Watermelon & Cucumbers are inexpensive and very plentiful throughout their peak season (July-August), which makes this SIMPLE 5-ingredient salad an OUTSTANDING choice throughout these Summer months.
Ahhh...the taste of Sweet Summertime! 🥒🍉
This Salad couldn't be simpler, so it's the PERFECT hot weather salad to bring to all those BBQ'S! 👙🍔🌡
Cucumbers are just SO darn refreshing in the Summertime! And for a very GOOD reason!
Because cucumbers are composed of about 96% water, they help to keep us hydrated!💦
They contain vitamin C and other antioxidants, and nutrients that can help protect our skin from sun damage.
Bonus points!✔
Vitamin C boosts collagen and elastin, which helps to keep skin looking vibrant while natural acids found in the cucumbers protect our skin cells from UV radiation.
Cucumbers also have natural anti-inflammatory benefits and help to prevent water retention.

So let's load up on cucumbers during this glorious season of sunshine seeking!
makes about 6 servings
Ingredients:
6 cups watermelon, seeded and cubed
1 English cucumber, chopped
6 oz feta cheese, cubed
handful of chopped fresh mint leaves
1 fresh lime, zest and juice
sea salt flakes and fresh ground black pepper, to taste
Instructions:
Add your cubed watermelon into a large serving bowl along with the rest of your ingredients.
Very gently toss to combine.
Taste test, and adjust if desired.
Serve and enjoy!

Ingredients
Lemon Pepper Chicken:
6 chicken thighs , skin-on, bone-in
4 teaspoons lemon pepper seasoning , divided
¼ cup flour (use gluten free flour for gluten free version)
2 tablespoons olive oil
Creamy Sauce:
1 teaspoon olive oil
½ tablespoon butter
5 garlic cloves , minced
¾ cup chicken stock
1 teaspoon lemon pepper seasoning
½ cup heavy cream
½ cup Parmesan , shredded
2 tablespoons lemon juice , freshly squeezed
3 green onions , chopped (use only green parts)
Garnish:
freshly parsley chopped
lemon slices
Instructions
Lemon Pepper Chicken:
Preheat oven to 375 F.
Mix 3 teaspoons of lemon pepper seasoning with flour. Pat the tops (skin side) of chicken thighs with this seasoning mixture.
Heat 2 tablespoons olive oil on high-medium heat in a large skillet.
Add chicken thighs skin side down and cook for about 4 minutes on high-medium heat until browned, uncovered. Sprinkle the other side of chicken with 1 teaspoon more of lemon pepper seasoning.
Flip the chicken thighs over and cook for 2 minutes on the other side. Remove from heat.
Line baking sheet with aluminum foil. Place chicken thighs skin side up (crispy side up) on the baking sheet and bake at 375 F for about 15-20 minutes, until the chicken is fully cooked, the juices run clear and the chicken is no longer pink in the center

Ingredients
Marinade:
3 tablespoons EACH: lime juice AND pineapple juice
2 tablespoons EACH: Worcestershire sauce AND oil (any kind)
5 cloves garlic (pressed or minced)
2 teaspoon EACH: ground cumin AND chili powder (mild or hot)
1 teaspoon EACH: smoked paprika AND Mexican oregano
½ teaspoon onion powder
2 tablespoons chopped cilantro
1 jalapeño, sliced (optional, if you like heat!)
Fajitas:
1 ¾ - 2 pounds boneless skinless chicken breasts (or thighs)
3 bell peppers (any color)
1 red onion, thinly sliced
to serve: tortillas, homemade guacamole, guacamole salsa, salsa, sour cream, cilantro-lime rice, sautéed corn, shredded lettuce, and the list can go on and on
Instructions
MARINADE: combine the ingredients for the marinade along with 1 ½ teaspoons salt and ½ teaspoon black pepper. Use a whisk to combine before adding the jalapeño slices and the chicken breast. Let marinate covered in the refrigerator for 4-6 hours. Remove from the refrigerator and allow the chicken to sit at room temperature for 30 minutes before cooking.
Set a large cast iron skillet or nonstick skillet over high heat and let heat up for a couple of minutes. Drizzle in a teaspoon of oil and add half the chicken to the pan and cook on each side for about 3-5 minutes or longer depending on the thickness of the chicken. If the pan becomes too hot, reduce the heat to medium-high. Remove the chicken from the panand allow to rest for several minutes. Cooke the remaining chicken the same way. Slice the chicken into thin slices.

Meat
1 1/2 cups: Chicken bone broth/stock, low-sodium or homemade
2 1/2 lb: Chicken breasts, boneless skinless
Resources
3: Garlic cloves, fresh
1 handful: Parsley, fresh
1 15 ounce jar: Tomatoes, with juice
1: Yellow onion, sweet

1/4 cup: Balsamic vinegar
