Perfect protein fiber snack : Banana Bread Bars
Ingredients
Dry bowl
* 1 cup vanilla protein powder (I used Transparent Labs™ but as long as yours is NSF verified, NSF sport verified or informed choice/sport to make sure label accuracy and safety )
* 1.5 cups oat flour
* 1/2 cup quick oats
* 2 tsp cinnamon
* 1/2 tsp nutmeg
* Dash of salt
Wet bowl
* 2 medium bananas, mashed until puréed
* 1/4 cup peanut butter (cashew butter recommended for less peanut butter flavor)
Fold-ins
* 1/2 cup no-sugar-added chocolate chips
* 1/2 cup roasted walnuts, chopped
Directions
1. In one bowl, whisk together the protein powder, oat flour, quick oats, cinnamon, nutmeg, and salt.
2. In a second bowl, mash the bananas until puréed, then stir in the peanut butter.
3. Combine the wet and dry mixtures and mix until a batter forms. No sweetener needed; the banana and protein powder provide sweetness.
4. Fold in the chocolate chips and chopped walnuts.
5. Pan size, bake temp, and bake time: to be added.
6. Cool completely and cut into 16 bars.

Cornbread Chicken Pot Pie Casserole 🌽🥧 cozy season is HERE
Filling (right in the casserole dish):
• 2 cups shredded cooked chicken breast
• 1 cup frozen diced onion, defrosted
• 1 (10 oz) bag frozen green bean/corn/carrot medley
• 1 (15 oz) can cannellini beans, drained + rinsed
• 3 garlic cloves, minced
• ½ tsp smoked paprika
• 1 tsp thyme
• Salt + pepper
• Sauce: 2 tbsp cornstarch whisked into 1 cup low-fat milk + ¾ cup bone broth
Cornbread topping: (to be honest it felt like a lot of corn bread prob would only use 1/2 to 3/4 of the mixture this will also lower calories )
• 1 box cornbread mix- I used gf but you can use whatever
• 2 eggs
• 1 cup low-fat milk or plant milk
• ½ cup nonfat Greek yogurt
1️⃣ Add the chicken, veggies, beans, garlic and seasonings to a casserole dish.
2️⃣ Whisk the cornstarch into the cold milk and broth until smooth, then pour it over and stir.
3️⃣ Mix the cornbread batter and spread it evenly over the top.
4️⃣ Bake at 375°F for 45 min, until golden brown.
Serves 6 | per serving: 495 cal · 33g protein · 8g fiber

Apple pie donut holes
1/2 cup self rising flour
1/2 cup non fat Greek yogurt
1/2 tsp apple pie seasoning
1 tbsp non nutritive sweetener
1/3 cup baked apples
1 tsp vanilla extract
Make into balls
Air fry 390 7min
Melt 1 tbsp butter/coconut oil in one cup
On a plate mix cinnamon and truvia or sugar of choice
Roll cooked donut holes in butter/oil then cinnamon sugar

Lactation S’mores Energy Bites
Looking for a nourishing snack that is packed with iron, magnesium , zinc, omega 3 and more!! Even if you aren’t breastfeeding these are incredible for all postpartum moms
Makes: ~30 bites (1 bite per serving)
Ingredients
* 1/2 cup peanut butter
* 1/2 cup powdered peanut butter (about 4 scoops, 12g each — nutrition facts per scoop used)
* 1/2 cup no-sugar-added chocolate chips (4 servings per bag’s label)
* 1/2 cup mini marshmallows
* 1/8 cup honey
* Dash salt
* 1/2 tbsp cookie butter extract (0 calorie)
* 3 tbsp flax seed meal
* 3 tbsp h**p hearts
Directions
1. In a large bowl, stir together the peanut butter and powdered peanut butter until smooth and well combined.
2. Add the honey, cookie butter extract, and a dash of salt; mix until fully incorporated.
3. Fold in the flax seed meal and h**p hearts until evenly distributed.
4. Fold in the mini marshmallows and chocolate chips last, so they stay mostly intact rather than melting into the mixture.
5. Roll into ~30 balls (a scant 1 tbsp each). Chill in the fridge for at least 30 minutes to firm up before serving.
6. Store in an airtight container in the fridge for up to 1 week, or freeze for longer storage.
