🥕 High-Protein Southwest Carrot Soup 🌶️
Creamy, comforting, and made with real food!
This soup started as “what do I do with all these carrots?” and turned into a nutrient-packed meal with 22g of protein per serving—without heavy cream.
Ingredients
🥕 2 lbs baby carrots
🧅 1 medium onion, chopped
🫑 1 red bell pepper, diced
🌶️ 1 jalapeño, seeded and diced
🧄 4 cloves garlic, minced
🌶️ ¼–½ tsp cayenne pepper
🥛 2 cups unsweetened almond milk
💪 2 blocks (10.9 oz each) firm or silken tofu
🍅 1 can Rotel diced tomatoes with green chilies
🍅 1 can (14.5 oz) petite diced tomatoes
🫒 1 Tbsp olive oil
Salt & pepper to taste
Green onions for garnish
Directions
Sauté carrots, onion, bell pepper, jalapeño, garlic, and cayenne in olive oil for about 45 minutes until softened and fragrant. Add almond milk, cover, and simmer until carrots are tender.
Blend the vegetables and liquid with tofu until smooth and creamy. Return to the pot, stir in tomatoes, season, and simmer 5–10 minutes.
