Happy Tuesday to all just want to give everyone a heads up we are having phone issues with spectrum for the next two hours. If you need to schedule an appointment or get a hold of us just leave a message on the machine and will call you right back.

๐™„๐™ฃ๐™จ๐™ฉ๐™ง๐™ช๐™˜๐™ฉ๐™ž๐™ค๐™ฃ๐™จ ๐Ÿ”ช
First, the marinate is key. In a food processor, pulse together 1/3 large red onion, 4-6 cloves garlic, 1/3 cup of pistachios, and a large handful of fresh parsley. Pulse well.
Add 2 lbs of ground beef (or a mixture of beef/lamb) to a large bowl. Recommend 80/20, especially if grilling. Top the beef with the marinade. Then add a couple of pinches salt, 1 tbsp smoked paprika, 1 or 1.5 Teaspoons cumin, 1.5-2 tbsp sumac, and ground pepper, and mix very well. Cover and let it soak up the flavors for at least 30 mins. Ideally, it takes 2-4 hours.
When you are ready to make these, dip your fingers in a bit of water to make it easier, then use your fingers/hands to roll them into logs, patties, or whatever shape you prefer. You can grill these or if you don't have one, pan-fry them on medium-high heat till they develop a nice crust on all sides. Time depends on how thick/thin you make them.
Plate these up, dust them with more sumac and fresh parsley, and serve them with a cucumber dill yogurt dip.
Add 3/4 cup thick Greek yogurt to a bowl to make the sauce. Add sea salt, ground pepper, squeeze 1/2 small lemon, 1-2 minced/grated garlic cloves, 2 tablespoons fresh dill, and 1 shredded Persian cucumber. Mix together, give it a taste, and adjust.
