Asian seared Tuna on a bed of green salad with lots of avocado

Tuna from Littlefisherman Glengarry

For sauce I used

olive oil

sesame oil

2 cloves of garlic

1 cm piece of fresh ginger

1 tablespoon low-salt soy sauce

1 tsp lemon

2 sprigs of fresh coriander

1 spring onion

1 fresh red chilli

BLOOD CLEANSING SMOOTHIE

Beetroot helps in repairing and reactivating the red blood cells in the body. I love adding it to my salads, smoothies or just roasted in the oven.

For the smoothie I used

1 Small beetroot
1 small apple
1 Thumb size grated ginger

Blend all ingredients with a bit of water.

Note: I was going for the dairy free version so I did not add milk or yogurt.

QUICK LUNCH IDEA

Delicious but very quick to make. No need to break your back in the kitchen.

I used Beetroot wrap from TrulyGood filled with rocket, spinach, a mix of salad leaves, avocado, fried mushrooms and Blue cheese.

So yesterday when the weather was gloomy I decided to make this immune boosting soup inspired by .glow but I added more veggies

2 cloves Garlic
1 Thumb size Ginger
1 Tablespoon Turmeric
200g Left over chicken
1 Cup Chicken stock
3 Stems Broccoli
1 head Pak Choi
6 Button Mushrooms
2 Celery Stalks
3 Baby Aubergine

Method:
Sautee turmeric, ginger, garlic celery until soft.
Add the rest of the veggies, chicken stock and the chicken, boil until veggies are soft.
Serve with parsley
