Malva Pudding

Ingredients

1 1/2 cup milk
1/3 cup butter
1 tablespoon white vinegar
1/4 cup apricot jam
1 cup brown sugar
1 teaspoon vanilla essence
2 large eggs
1 1/2 cups flour
2 teaspoon baking powder
1 teaspoon bicarbonate of soda
1/2 teaspoon salt

Method

Preheat oven to 180degrees

Grease ovenproof dish.

In a saucepan heat milk and 2 tablespoon of butter, stir in vinegar.
Cream remaining butter and sugar, add jam and mix. Add eggs one at a time, beating well after each addition. Mix in vanilla essence. Sift dry ingredients onto butter and sugar mixture, lastly add milk mixture.
Pour into dish and bake for 45 to 60 minutes or until cooked through.

Sauce

Ingredients
1 1/4 cup sugar
1 cup boiling water
2 cups milk
125g butter
1 teaspoon vanilla essence

In a saucepan mix all ingredients and bring to boil . Pour the hot sauce over cooked pudding.
